Blueberry Pumpkin Muffins

These are really good. I underbaked mine a bit by accident, since my oven usually runs hot. So next time I'll go the full 20 minutes instead of 17 min. My 2 1/2 yr old nephew loved these! I felt good knowing that they actually have some nutritional value.

Dreamy Nighttime Drink

I have this often in the winter when it's soooo cold out. It's perfect just before going to bed. Try it with almond extract instead of the vanilla. Awesome!

Wisconsin Native's Beer Cheese Soup

This is pretty good, but I think it's a touch bland, honestly. I'm not really sure what it needs. It just tastes like beer. Anyway, I halved the recipe and used Budweiser's American Ale, which my parents gave me. I probably wouldn't buy the stuff on my own, but it's alright. I used the exact same ingredients, but I changed the method to make it easier. Instead of using two different pans, I just sauteed the aromatics in the butter; then, when they were getting soft, I added the flour and mixed it into a paste with the veggies. I then added the liquids, brought the liquid up to a boil, then brought it back to a simmer to add the cheese. After the cheese was melted and incorporated, I let the pot simmer for about ten minutes just to make sure the veggies were soft. A lot easier than dirtying two pans!

I made this for my friend for her birthday, and she loved it! I put it in a decorative bottle with some candied lemon peel. It looked really cool and tasted even better. I will definitely make this again!

April's Roasted Red Pepper Cheese Ball

I took this to a family gathering and, even though it was one-upped by my sister-in-law's tortilla rollups, everyone still loved it. I served it with multigrain crackers and wheat thins. I also upped the seasoning a bit and added some smoked paprika. Delish!

Poppy Seed Cranberry Bread

This was okay, and people seemed to like it at my family gathering, but I really didn't think it had enough cranberries. I would probably double the amount next time. I added some fresh lemon juice to the glaze.

BBQ Nachos

Great idea! It really hits the spot. I used one smoked sausage link (cut the end off before shredding, and the casing will peel away as you shred it), and I added some sour cream after microwaving. Good snack!

Shrimp Dip II

I'm giving this a four because I made a few changes. Instead of canned shrimp I used some cooked, peeled shrimp that I had on hand, and just chopped them up. Then I added artichoke hearts and black olives and heated the whole thing up with some Jack and parmesan cheeses on top. Yum. Mee. I'm eating it with tortilla chips. Love the horseradish!

Green Bean Turkey Bake

I realized when I got home from Thanksgiving that whoever had packaged the leftovers at our huge family gathering hadn't given me any gravy! What's up with that? So I decided to try this recipe to use up my gravy-less potatoes and turkey. And well, it's not gourmet, but it's definitely comfort food on a blustery day like today. I didn't thaw my green beans, which was fine. I microwaved the first mixture for 4 and a half minutes, then topped it with cold potatoes and microwaved another 4 minutes, and it's not piping hot, so I might warm it up some more. Make sure to season this generously with salt and pepper!

Chocolate Cakes with Liquid Centers

Woah. These are seriously, seriously, SERIOUSLY rich. Even after baking for 9 minutes, mine still came out a little too liquid-y for me. The one I unmolded came out of the ramekin fine, but the center was spilling out through a break in the side. I think I'll refrigerate the other three and see if I like them better that way. The flavor is phenomenal, though!

Garlic Bread Fantastique

Yup, a little too much oregano, and, frankly, a little too much butter/mayo overall. I'm eating it on whole wheat baguette from the bakery where I work, and I can taste the butter practically dripping out of the bread whenever I take a bite. But darn is it good! :)

Blueberry Apple Crisp

I didn't like this that well. I took it to Thanksgiving, and I'm about the only one who ate it. It definitely needs some more spices, and I guess I shouldn't have covered it, because it was super soggy as well. An oatmeal topping would have been much, much better.

Cinnamon Stove Top Granola

This is really yummy! In fact, I can't seem to stop eating it. I love the honey in it. I used the orange blossom variety, and it's delicious. I also added walnuts and a few pine nuts. I've had it plain and with milk, which is great because I don't like regular oatmeal.

Barbie's Tuna Salad

I wish I had read the previous reviews, because this had way too much mayo. (Something I realized as I was putting it into the bowl.) That being said, the flavor is really good. I only used about a tbls of relish, and I left out the dill weed because I didn't have any. Next time I would use less mayo, same amount of pickle relish, and add diced celery for a little crunch. Love the curry!

Spicy Potatoes and Scrambled Eggs

Pretty tasty. I chopped up my raw potato first, then 'par boiled' it in the micro (put it in a bowl with a little water in the bottom, then partially covered and microwaved for about 5 minutes) and finished the dices in the pan with olive oil and the spices. I didn't peel my potato, but it's a very thin-skinned garden variety, so I don't think it mattered. I also added cheese to my eggs, because that's how I roll. Yum!

Spaghetti Squash with Pine Nuts, Sage, and Romano

Spahetti squash is so fun! I think mine was a bit undercooked at 50 minutes, but I went with it, anyway. I used more butter than called for - closer to 2 T instead of 2 t. I also used parmesan instead of romano. The combination of flavors is delicious.

Corn Chowder II

This is some serious comfort food. It's a sweet corn chowder, due to the canned corns. I liked the addition of the peppers, as they gave it a nice flavor. But I'd like to try a less sweet chowder next, perhaps with frozen corn and cream or half and half. There was definitely not enough liquid here. I added the liquid from the canned whole kernel corn and also added milk until it was the consistancy that I wanted.

Oatmeal Chocolate Chip Cookies III

Hmmmm.... I'm not sure how I feel about these cookies. The first couple of batches of mine got overdone at 10 minutes, and I used more than a teaspoon of dough. They're pretty crispy and do fall apart easily. I left mine on the baking sheet for a couple of minutes before trying to transfer them to the cooling rack. Overall, I don't think I would make these again. They just didn't turn out as well as I thought.

Easy Apple Coleslaw

This was a tad sweet for me, so I would probably use less sugar next time. I also like the idea of adding apple cider vinegar, although I didn't think of that because I didn't read the reviews first. I used red cabbage, one huge braeburn apple, and left out the green onions, as I didn't have any. The salad is really pretty, although the dressing turned a little pink due to the red cabbage. I would definitely make this again with a little tweaking.
