Apple Chicken Slaw

Even though I used a different dressing, I just wanted to say that I think this is a great idea for a quick dinner during the hot weather. I just quickly poached some chicken tenders, then let them sit in a mix of s + p, red wine vinegar, and a bit of sugar while they cooled off. Then mixed everything together! Thanks for the idea!

Mom's Dill Potato Salad

Yum! I love this potato salad! My mom used to make it sometimes too. I used fresh dill instead of dried, and I diced up my potatoes before boiling them. Whenever I make tato salad, I always drain the potatoes and then season them generously with salt and pepper while they're still warm. I think maybe it helps to flavor them up a little. Thanks for the great recipe!

Citrus Cabbage Slaw

Instead of dumping the juice from the canned fruit (my mom taught me not to waste that stuff! :) ), I used it in the dressing and cut back on the sugar and oil. I think I used about 3 Tbs of oil and about 1/4 c of sugar, plus the fruit juices, vinegar, etc. It's quite light and refreshing. I don't know how often I'd make it because it's not something my family would generally like, but it's definitely something different and tasty! Thanks!

Chocolate Meringue Cookies

Very yummy! Thanks to all the reviewers with the great tips on beating the egg whites. I used my stand mixer and it was very quick and easy. I got closer to 30 cookies, and some of them were bigger than a teaspoon size.

Rhubarb Sauce II

Oatmeal Apricot Squares

These were good with a couple of changes - I doubled the recipe for a 9x13, then added a bit of milk to make the oatmeal/flour mix bind together. I figured if I couldn't get it to stick together while I was mixing it, then it definitely wouldn't after it was baked in the pan. I also added cinnamon and about a teaspoon of vanilla. Used homemade apricot jam. Everyone at my work loved these!

Rhubarb Coffee Cake

This is just wonderful! I made it in a 9x13 pan, and I ended up using plain yogurt instead of sour cream and butter instead of shortening, because that's what I had on hand. My guess is it would be just as fabulous with what the recipe calls for, though. And I have to say that I think this would be fantastic with peaches too!

I like the roasted garlic flavor, but 1 T lemon juice and a T of olive oil is not enough to make this a hummus-like consistency. I only used 1 can of chickpeas, and I still had to add extra olive oil and water.

Cinnamon-Curry Tuna Salad

I like the cinnamon-curry flavor, although I might add less of both next time. I can see how raisins or apples would greatly enhance this. My one huge problem is that it calls for an entire teaspoon of black pepper. A whole teaspoon?? That's a heck of a lot of pepper for two cans of tuna. I just added mine to taste.

Garlic Teriyaki Edamame

I'm a little confused as to how 1/4 c of water can cook a pound of edamame in the shell. I've always boiled edamame in a large amount of water, and the package itself suggests 6 cups of water! So anyway, I just boiled mine the usual way, then drained it and added the rest of the ingredients. It's okay, but I don't see that it's a huge improvement from regular edamame with salt and pepper. Thanks anyway, though.

Cindy's Jambalaya

I made this almost completely as written, EXCEPT... I did not cook my shrimp for 10 minutes. I waited until everything was done, turned the heat to low, then added the shrimp, and let the hot mixture cook the shrimp through. I think cooking the shrimp in the mix for 10 minutes would have definitely overcooked them. Otherwise, an awesome recipe! Thank you!

Borscht I

I used mostly the same ingredients, but I didn't go through all the procedures, because I didn't really see the point of it. I just wanted to say that I roasted 3 large beets, then left them in the soup and used red cabbage AND purple potatoes! Then, after everything was soft, I used my immersion blender to puree the whole thing. This soup is the most beautiful ruby color. It's gorgeous! I'm eating it next day, cold with a dollop of yogurt, and drinking a Purple Haze from Abita, just to go with the theme. :)

Oil-Free Apple Herb Salad Dressing

I'm giving this a 5 for the idea, however I added some mustard and a little honey, and I don't think I would have eaten the dressing without these additions. I can see a lot of possibilities for this, though, like adding garlic, celery seed, mustard seeds, etc. Thanks for the inspiratiion!

Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

This was just fine. It was somewhat good, but I probably wouldn't make it again. I added extra seasonings, like sage and mustard powder, and also added about half a bottle of beer to the crock pot. And it was just okay! I did have to cook mine longer than 5 hours - actually, I went 7 hours and turned it on high for one hour, just to make sure the sweet potatoes were done. Thanks for the recipe...

Best Bircher Muesli

Yum! This is the best! I don't even like oatmeal that well, but this is delicious, and easy! I used vanilla yogurt, skim milk and dried cranberries. I think I'm going to add some cinnamon tomorrow. Thanks for the recipe!

Raspberry-Walnut Shortbread

My mom and I doubled this recipe, and maybe that's why it took longer to bake. The flavor is amazing!!! But we had some problems getting it to set up in the middle. But definitely good enough that I will try again! Thank you!

Aunt Anne's Sesame Cookies

I really liked these, and gave them to several people who really like them too! Even people who claim to not like anise flavor! The only changes I will make in the future will be to use pre-toasted sesame seeds - they didn't get quite as toasty as I would have liked in the oven. And to chill the dough before rolling it. I didn't at first, and the dough was sticking to my hands really badly. Next time I'll let it sit in the fridge for an hour or so. The only change I made was to add a little lemon extract along with the anise. Delish! Thanks for the recipe!

Poppy Seed Mini Muffins

Maybe my oven runs hot or something, but I baked these for 10 minutes and they were already overdone. I should have known better, since normal muffin recipes are usually baked lower than 400 degrees, and these were mini muffins too. Too bad.
