Gazpacho

I think this is absolutely yummy! I used Spicy V8 juice for the tomato juice, used fresh herbs including cilantro and omitted the green pepper. Also, put a little lemon rind in with the juice. It was so good. Will make again! (maybe tonight...)

Amateur's Light Breeze Chicken Chili

I have to be honest... I was looking forward to this chili all day. The first batch I made was so blazing hot, no one could eat it. So, I made it a second time without the jalapenos~ still pretty darn spicy. Next time, I'll make a few more adjustments. The consistency was great and sooooo easy to make. I'm going to keep trying :)

Easy Sausage Strata

I bet if you follow this recipe exactly, it would be good. Unfortunately, due to food allergies, I had to alter. I used leftover onion sandwich rolls, soy based products (milk, cheese and meat) and added broccoli. It was ok. Again, probably great with the 'real' stuff.

Caribbean Sweet Potato Salad

This potato salad is beautiful and delicious. I assembled the night BEFORE the party and found the next day, I needed a smidge more dressing. On the second day dressing, I used only lime juice, mustard, s&p and a few drops of oil... This was excellent. I used salted crushed peanuts and it made all the difference (without it, I would have had to add more salt to the salad). I have to admit, this was the prettiest dish on the table! And although I doubled the recipe, this was the first bowl emptied! Great summer recipe!

Chicken Marsala

I couldn't bring myself to prepare this recipe exactly as shown! So much fat! I decreased the butter to 1 TBSP, used olive oil spray, and used Perdue 'thin & fit' breasts. I increased the shrooms to 3 cups. This dish was fast and tasty. Not as tasty as I've had before, but again, I decreased the richness in the recipe! This is a great recipe when you are in a hurry. Next time, will try a variety of mushrooms~ that would be yummy, too.

Moroccan Lentil Soup

Wish you could give 1/2 stars... this is a 4 1/2 stars recipe. Very good. I love a recipe that make me feel like I'm blowing my diet. This is a very hearty soup/stew. Would be 5 stars with chix/veggie broth instead of water. However, it would add a ton of salt. As this 'rested', it was better and better. A good, cheap, winter staple. p.s. the second day, i served it with rice... yum.

Chuck's Favorite Mac and Cheese

I'm giving this 5 stars because if I had made it exactly as the recipe stated, this would be fantastic. I always feel guilty over the white pasta and fat content, so I alter recipes to make it lower in everything. Because of that, this was a 4 star recipe... But that isn't fair to Chuck! His recipe with white pasta and high fat cheese HAS to be delicious!!! This was a good recipe without those things, so I can only imagine how yummy and comforting this mac-n-cheese would be with starch and fat added! If you want an alternative, try whole wheat pasta and reduced fat cheeses and lower salt. Add a pinch of milk for moistness ~ Still pretty darn good. Makes a big batch, too!

Sweet Potato Bread II

I made this for t-day breakfast and WOW! was it great! I did a few alterations (suggestions from some of the others). Used only 2 cups sugar, divided the flour into 1/2 ALL-PURPOSE and 1/2 WHOLE WHEAT, and microwaved the sweet potatoes. Made mini muffins, baked them for 12 minutes. The recipe made about 42 mini muffins. NO LEFTOVERS! Soooooooo good.

Fresh Broccoli Salad

Loved this salad! Tweaked a little... added craisins instead if raisins and sunflower seeds instead of almonds due to allergies. Enjoyed very much. Served with burgers on the grill and tossed salad. Would be great for potluck or picnic. Thanks, Nora!

Easy Lemon Cookies

I love a cookie recipe that does not call for butter!!! My son is allergic to milk, so I'm in love with this cookie! I made these exactly as the recipe calls for ~ in record time, chilled for 30minutes, and rolled in powdered sugar. They bake up very softly which is great for my 2 year old. My husband loved these, too. I'm going to try it with chocolate cake mix tonight! The lemon favor can be overwhelming, but so much better the next day.

Best Ziti Ever

I wouldn't say this was the best ziti ever, however, it is good. Nothing that stands out... just a regular ole pasta dish. It could have everything to do with the sauce. It was a little on the bland side. I had to add salt and olive oil to my bowl.

Grilled Venison Backstrap

Finally.... I've been on the search for a good recipe for wild game. I used this for elk backstrap and it turned out fantastic!!! I made this on Valentine's and we both enjoyed it! I marinated it in the vinegar overnight, drained it in the morning, poured the bbq sauce and let it sit all day. You can not avoid the bacon. Wild game needs some fat so that it doesn't taste like leather. These nuggets were delicious! Thanks!

Slow Cooker Chicken Cacciatore

this recipe was ok... Needs a little something. Maybe salt? I definately added it after it cooked. I served this with whole wheat pasta. Maybe something rich like mashed potatoes would be better. I'll make this again because it is so easy. Did I mention I used frozen bell pepper and onion mix? So you can imagine how easy this was... no chopping!

Downeast Maine Pumpkin Bread

This is a delicious and easy bread to make. I always alter recipes to make lighter, lower in fat and/or lower in sugar ~ so I did change a few things. But isn't that a sign of a great recipe? The foundation is so tried and true that you can change ingredients a smidge to suit your tastes? I used less sugar (1 1/2c white, 1/2 splenda brown), less white flour (2 1/2c AP flour, 1c WW flour), NO oil (used applesauce) and increased cinnamon to 2 tsp. Everything else remained the same and WOW! was it tasty with am coffee, pm coffee, after dinner, and so on. Thanks for a keeper!

Lebanese Chicken and Potatoes

This was good... I adjusted the recipe because I had some veggies that I wanted to use up. Added a little onion, zuccini and shroom. Followed everything else to a T... used my mandoline to make thin potato slices. My family liked this alot. Very good the next day, too.

Pumpkin Roll I

I have to give this 5 stars because if I had made it with dairy, it would have been sensational! However, my son is allergic, so I made this with soy butter and soy cream cheese. AND it is still super duper yummy! The cake is so moist. Very easy to handle (putting it in the tea towel to roll). I used a 9x13 pan. The cake is probably thicker than it should be, but I don't care ~ it was still delicious. My son said, "mmmmmmm, cup-key" after trying a bite. He's 2 :)

Chicken and Corn Chili

This was ok. Very easy to make, however, it lacked something extraordinary. I could definately tell it was from jars and cans. I like a recipe that uses jars and cans, but tastes homemade... this wasn't it.

Grilled Asian Chicken

This was great! I should have marinaded the chicken longer or even overnight and it would have been superb! But for lack of time, I prepared as stated. Tasted like a satay. This marinade would be great with fish, too. I served with sweet potato and steamed veggie infused with ginger. One word~ yummy! p.s. I used a 'honey substitute' which is sugar free... couldn't tell the difference.
