Easy Sausage Strata

I bet if you follow this recipe exactly, it would be good. Unfortunately, due to food allergies, I had to alter. I used leftover onion sandwich rolls, soy based products (milk, cheese and meat) and added broccoli. It was ok. Again, probably great with the 'real' stuff.

Lebanese Chicken and Potatoes

This was good... I adjusted the recipe because I had some veggies that I wanted to use up. Added a little onion, zuccini and shroom. Followed everything else to a T... used my mandoline to make thin potato slices. My family liked this alot. Very good the next day, too.

Chicken Wild Rice Soup

Pumpkin Roll I

I have to give this 5 stars because if I had made it with dairy, it would have been sensational! However, my son is allergic, so I made this with soy butter and soy cream cheese. AND it is still super duper yummy! The cake is so moist. Very easy to handle (putting it in the tea towel to roll). I used a 9x13 pan. The cake is probably thicker than it should be, but I don't care ~ it was still delicious. My son said, "mmmmmmm, cup-key" after trying a bite. He's 2 :)

Easy Lemon Cookies

I love a cookie recipe that does not call for butter!!! My son is allergic to milk, so I'm in love with this cookie! I made these exactly as the recipe calls for ~ in record time, chilled for 30minutes, and rolled in powdered sugar. They bake up very softly which is great for my 2 year old. My husband loved these, too. I'm going to try it with chocolate cake mix tonight! The lemon favor can be overwhelming, but so much better the next day.

These are absolutely delicious and addictive... be warned! Fairly easy to assemble if you like working with sticky. I love these flavors together. Putting it in my permanent 'sweets' folder.

Moroccan Lentil Soup

Wish you could give 1/2 stars... this is a 4 1/2 stars recipe. Very good. I love a recipe that make me feel like I'm blowing my diet. This is a very hearty soup/stew. Would be 5 stars with chix/veggie broth instead of water. However, it would add a ton of salt. As this 'rested', it was better and better. A good, cheap, winter staple. p.s. the second day, i served it with rice... yum.

Best Ziti Ever

I wouldn't say this was the best ziti ever, however, it is good. Nothing that stands out... just a regular ole pasta dish. It could have everything to do with the sauce. It was a little on the bland side. I had to add salt and olive oil to my bowl.

Super-Delicious Zuppa Toscana

This was deliscious! I would have made it ExACT, however, I didn't have all of the ingredients on hand. It didn't matter... This was T-rrific. I used liquid smoke instead of bacon and fat-free half-half. I made it early in the am and let it sit... So good. Perfect for chilly wet day!

To Die For Blueberry Muffins

These muffins are great! I used a frozen 'mixed berry' medley and dusted them with flour before adding. I had a lot of streusel topping leftover. Next time, I'll make a double batch of muffins, a single batch of topping ~ a single batch of both yielded only 24 mini muffins. Yummy!

Chocolate Muffins

These are delicious, very moist, almost cupcakish muffins. Made 24 minis and 18 reg size muffins. Next time, may add the chips to each individual cup... depends on my mood! These were great and very easy to assemble.

Pepperoni Bread

This is a good, quick pizza roll to make. I liked the pepperoni in it, although, it can be greasy. Next time, I'll try it with a few veggies. I ended up using refridged dough because my store doesn't carry the frozen dough. Go figure. Very tasty.

Grandma Ople's Apple Pie

The taste of this pie is delicious, however, the set up was a disaster! The caramel sauce was everywhere! And once in the oven and reheated, it travelled again. I followed the recipe exactly, but my apples were still a little on the crisp side. Don't get me wrong, I will try this again because the flavors are fantastic! Next time, when I prepare the caramel, I will toss apples in the sauce and then mound in the pie shell. Also, I need help on the lattice work, but that takes practice. This was my first apple pie... Thank goodness we don't care about looks around here:) It is still getting eaten!

Chantal's New York Cheesecake

Chantal, you have given me a gem!!! I love this cheesecake. The basic recipe is excellent for all of your variations and additions. Beautiful in appearance and delicious, too. I used 1/3 less fat cream cheese and 'light' sour cream with this recipe and it turned out just as creamy as the full fat. A girlfriend said, "this tastes restaurant bought". I did use a waterbath, cooked for 1 hour and then cooled in the oven for 6hours (overnight). I had a small crack in the center, but it gave it character. My husband said it was ALMOST too pretty to eat. Thanks for a great recipe!

Grilled Venison Backstrap

Finally.... I've been on the search for a good recipe for wild game. I used this for elk backstrap and it turned out fantastic!!! I made this on Valentine's and we both enjoyed it! I marinated it in the vinegar overnight, drained it in the morning, poured the bbq sauce and let it sit all day. You can not avoid the bacon. Wild game needs some fat so that it doesn't taste like leather. These nuggets were delicious! Thanks!

Slow Cooker Chicken Cacciatore

this recipe was ok... Needs a little something. Maybe salt? I definately added it after it cooked. I served this with whole wheat pasta. Maybe something rich like mashed potatoes would be better. I'll make this again because it is so easy. Did I mention I used frozen bell pepper and onion mix? So you can imagine how easy this was... no chopping!

World's Best Lasagna

This was a very good lasanga... I altered it (of course) to reduce the fat and starch content, however, it was outstanding! I used chicken italian sausage, ground elk meat, reduced fat/no fat cheeses and whole wheat lasanga noodles. I made it the day before ~ this was outstanding. Makes a big pan, so we ate 3 meals from it... Thanks! Oh in addition to having 3 meals, I also have about 2 pots of spaghetti sauce let over from this... In the long run, a great time saver!

Chuck's Favorite Mac and Cheese

I'm giving this 5 stars because if I had made it exactly as the recipe stated, this would be fantastic. I always feel guilty over the white pasta and fat content, so I alter recipes to make it lower in everything. Because of that, this was a 4 star recipe... But that isn't fair to Chuck! His recipe with white pasta and high fat cheese HAS to be delicious!!! This was a good recipe without those things, so I can only imagine how yummy and comforting this mac-n-cheese would be with starch and fat added! If you want an alternative, try whole wheat pasta and reduced fat cheeses and lower salt. Add a pinch of milk for moistness ~ Still pretty darn good. Makes a big batch, too!
