Gingerbread Men

This was an awesome recipe and very easy to follow. I did make a tweak by adding nutmeg. I really appreciate the easiness of being able to roll the dough; however, didn't make as many cookies as mentioned, but nevertheless I will use this recipe again.

Pollo (Chicken) Fricassee from Puerto Rico

I loved this and will be making it again. I did add fresh baby carrots and I used white wine instead of red, and I didn't have any red potatoes, so I used 1 can of diced potatoes.

Quick and Almost-Professional Buttercream Icing

I love this Buttercream recipe. I found that I have to add a little more milk to mine to give it the texture that I'm happy with. I love how easy it comes together and will be using this all the time now when baking.

Cheesy Baked Cauliflower

This was a very easy and simple recipe to put together. I did use frozen cauliflower. The next time I make this I will add less mustard and less butter. I also think I just might add some bread crumbs to the top. My picky 8yo enjoyed it until I told her about the mustard and mayo. My non eating veg hubby enjoyed it as well.

Soft Sugar Cookies V

These were the best Sugar Cookies I have every made…let’s say the only sugar cookies I have made. I will keep this recipe for years to come. I did take another’s cooks suggestion of adding cream of tarter. I also add lemon zest to the wet batter. I was able to get 69 cookies out of two batches of dough, using butterfly and flower cookie cutter. These made a great addition to my daughter’s 2nd birthday party. I made a cookie bouquet with them. I found that it was easier to cut out all of my shapes, place them a cookie tray with wax paper and pop them back into the refrigerate until they were firm {25 – 30mins}. This made transferring them to the baking sheet much easier; didn’t have to worry about them falling apart. As they cooled, I used a bamboo skewer to make the hole for the lollipop stick. I placed a small amount of the cookie icing on the lollipop stick and inserted into the cookie and decorated from there. I will be making more of these for my niece’s birthday party this weekend.

Pollo Fajitas

This was GREAT! I didn't use the soy sauce {I was out} and I used crushed pepper flakes instead of hot pepper sauce. I added the lemon juice and the vegetable oil to the marinate. I marinated 2lbs of chicken strips for 30mins at room temperature. I didn't cook these in a skillet; instead in the microwave for 15mins. I layered the onion and yellow bell pepper on the bottom of my Deep Dish Baker, added the chicken strips, cooked 15mins and let it rest for 5mins before serving to my family. Will use this Marinate at my Pampered Chef Shows. Thanks for sharing.

Oxtails with Gravy

I really didn't use the top portion of the recipe, but I can't knock it. I used the Gravy portion and received rave reviews from family and friends on New Year's Day as to how well the Oxtails came out. I loved the gravy and saved it when all the oxtails where gone and just had a great bowl of rice and gravy. This was a very pretty color gravy and thicken quite well. Will use this recipe again.

Bow Ties with Sausage, Tomatoes and Cream

Love this pasta dish. I used another cook's suggestion to use half and half, but I wasn't that crazy about the half and half. It was still a great dish and an enjobyable meal. Next time I will use the heavy whipping cream as stated. I did dice up 2 chicken breast and cooked with the sweet Italian sausage.

Two Bowl Cake

This cake was the greatest, my family and friends loved it! They could not believe that is was VEGAN! It also, reminded me of a Hostess cupcake without the cream filing. The next time I cook this cake I am going to make cupcakes...with cream filing.

Ninety Minute Cinnamon Rolls

These were great. I allowed my daughter and neice to make these and they loved them. We did leave ours to rise again while we went swimming. Great recipe to use with my girls and they didn't make it to the next day.
