Pear and Blue Cheese Salad

Very good, simple and quick. The dressing is the key but as others have noted, too much for the amount of salad. Use as much as desired.

Almond Biscotti

I've made this twice now, and have determined that I need to increase the flour (2nd batch I increased to 2-1/2 c. flour, 3rd batch I'll increase to 2-3/4 c.), and to increase the cooking time (1st batch 15 minutes, 2nd batch 17 minutes, 3rd batch will be 20 minutes). It was way to runny the 1st batch, and still a little (not much) on the 2nd batch, which is why I'm increasing the flour. I didn't cook either batch long enough and it was a bit dough-y in the middle, which is why I'm working towards 20 minutes for the next batch. Flavor is great. I also don't think 10 minutes per side is long enough. Maybe my oven is a bit off (??) All batches I added 1 cup of chopped dried cranberries and 1 cup of chopped almonds. 2nd batch also added zest from 1 orange. Great flavor on all.

My Amish Friend's Caramel Corn

Good recipe. It turned out better than I expected. It's a bit of a messy project, but I don't think I'd change anything. Just need to have a lot of space and a lot of trays, etc. I was making this for gifts and it didn't make as much as I would have liked. But, even then, it gets back to space. I have a small kitchen with little counter space and this was really pusing it. The end result was very good though.

EXCELLENT: VERY quick, easy and great tasting!! However, I'd make 1/2 a recipe unless you're serving a lot of people. Makes quite a bit.

Giant Focaccia Sandwich

I cut the recipe in half (6 servings), which was plenty big. Very good. I just made the bread, but I think the sandwich idea would be great too. Made bread as directed except made it in my kitchen aid mixer. I also cooked wheatberries in the pressure cooker, and then used 1 c. of the juice in place of the water, and added 1/2 c. of the cooked wheatberries. I cooked it in a 9 x 13 pyrex. Really good. Will make again.

Sausage Stuffed Mushrooms II

Very good and very easy. My twist on it: Used 12 oz of Framer John's pork chorizo (and blotted as much of the grease out as possible a couple of times), 8 oz. cream cheeze, probably about 1/2 cup Italian breadcrumbs, 1/2 onion, chopped. Cooked the chorizo. Drained and blotted. Added chopped onions and chopped mushroom stems. Cooked. Blotted again. Stirred in cream cheese. Put into a baggie and cut about 1/4" opening in 1 corner to fill mushrooms. Worked GREAT and fun too! I had 15 oz of crimini mushrooms. Had to go get another 15 oz of mushrooms to use all of the filling and fill a jelly roll pan with them. Will bake as others suggest. Excellent. Easy and fun.

Tofu Creamed Spinach

I'm giving this 4 stars but has the potential for 5 stars with a couple of changes. I made this with the soft, silken tofu rather than firm. NO ONE knew or cared. Really good. If my husband had been paying attention about the Tofu, he wouldn't have even tried it. It makes a LOT of sauce. Next time I'll use 4 packages of frozen spinach. Be sure to drain well. I used fresh (not worth it), and didn't drain well, so it was too soupy. A dash of nutmeg. Very good and healthy. Just don't let anyone see you with the tofu. :)

Crispy Baked Oatmeal

I'm changing my rating to a 5. That's after I just finished off the remainder of the batch. Like I said before, a very good base. I'll definitely use applesauce instead of oil, add nuts, probably flax seed, probably some dried fruit and who knows what else. Really good! I'd give it a strong 4. I actually made 1-1/2 of a batch because I had 3 eggs to use up. Therefore it made it thicker in the pan. I didn't pack it down much at all as it just said to spoon it in. Next time I'll pack it down abit as it really crumbles if you don't. I'd like to have it stick together a bit more than it does. I also added almonds (which I liked). It tastes a bit salty to me, but no one else thought so. But it tasted salty in a good way - like kettle korn (sweet and salty). I will definitely make again and substitute at least 1/2 of the oil with applesauce. Basically a very good base to which you could add nuts, cranberries, etc.

Fantastic Focaccia Bread

Well, it rose nicely the first time. Much less so on the 2nd rise. So it was much thinner than I would have liked - about 1/2" total. Could be because I rolled it too thin. Also, it seemed really bland.

Roasted Beet, Peach and Goat Cheese Salad

Although I think it has potential, and it was good, the goat cheese, fruit and beets are too heavy for the lettuce's used, and it becomes mashed/compressed just from the weight. Maybe if it was served on a platter with guests being able to add what they wanted, vs. having it pre-mixed, that would work. But pre-mixed I found it settled too much for the types of lettuces used.

Butternut Squash Bake

Made this for Thanksgiving and LOVED it. Really liked the thyme flavor with the squash. Used fetta instead of blue cheese, which I think would over power the squash and thyme. Great side dish because you can cut, toss, and stick in the oven until done.

Butter Bean Burgers

These had good flavor. Did they mimic a burger? No. They were a little dry. Could be that the ratio of crackers was too high. Trying to figure out how to make them "juicy". Changes: Used 1 T of butter rather than 1/4 c. of oil.

Butternut Squash Risotto

I'm editing my original review (below, 4 stars) after having had some leftovers from the other night. It IS really good, and not at all like "post-hole cement" like someone teased me. 5 stars. I thought it was really good. I brought it to a cooking group get together. Everyone said it was great. But I ended up with a LOT left over. So I question how good it really was. I doubled the recipe and it made a tremendous amount. It was very good. It just bothers me that there was so much leftover. So for that reason I gave it only 4 stars. Which is probably unfair. Relatively healthy too - given the amount of butter and cheese used in ratio to the yield.

Black Bean and Salsa Soup

Good. As well as quick and easy. Next time I would do the following: Double the beans (1/2 puree, 1/2 leave whole), double the cumin, leave the salsa unpureed. I also like someone's suggestion of serving with some cooked brown rice. I like the quick and easy aspect, as well as the small list of ingredients that are usually on hand.

Zucchini Cobbler

I'm giving this 5 stars as it's really quite good and does not taste like zucchini at all. I misread the recipe and shredded the zucchini without peeling it. That gave it kind of a green color. I don't recommend this. And I wish there was a solution to the butter that would avoid that step and make it more healthy. If anyone has any substitutions, I'd like to know about it. But otherwise it is a great use of zucchini and is really tasty too.

Black Beans a la Olla

I'm giving this 4 stars. It wasn't exceptional, but it was much better than I thought. And it didn't taste like tomato sauce like I expected. I think it could use some additional liquid, and then pureed a part of it. Quick and easy and used up some tomatoes, onions and cilantro I had on hand.

Indian Relish

This IS tasty, but I'm only giving it 3 stars because of the consistency issue, and the color. I cooked it for well over 30 minutes, and it never firmed up. I purred the majority of it with 1 T of corn starch. And then reheated. Consistency is much better, but it's a very red/orange color (a little unappetizing). I only used 1/2 t. of red pepper flakes, and it was just about right. We like things "mild". I also used about 3 oz of cream cheese that I melted into the mixture. It IS tasty - just not sure how to use it (other than with crackers). Seems like it would be a good spread for sandwiches (??)
