Mediterranean Lentil Salad

I love this! The only changes I made were; I used chicken broth (no salt/msg & fat free) instead of water and added extra celery at the end. The lentils took approximately 30 minutes to cook and I added extra broth 1/2 way through the cooking time.

Oven Roasted Potatoes

We really like these. I am generous with the spices and I do not peel the potatoes. I mix the spices in a small bowl. Separately, I put the cut potatoes in large bowl and stir them with the olive oil (more than 1/8 cup) to coat. Then I put the spice mixture in the bowl with the potatoes and stir until thoroughly coated. Put them in the oven until they are crispy. Very tasty!

Simple BBQ Ribs

This is the only recipe I use for country style pork ribs. The recipe works whether you have 2 pounds or 5 pounds. I always use approx 1 bottle of sauce. We like our ribs saucy. Always tender and tasty!

Spicy Rapid Roast Chicken

We make this often...using a whole chicken or pieces. I am generous with the spices and oil. I skip the cayenne pepper and use seasoning salt instead of regular salt. The total cooking time is approx 45 minutes in my oven for a whole 4 1/2 -5 pound chicken...a little shorter time for chicken pieces. It is easy and always tasty!

Cranberry Sauce I

Yum! I generally make cranberry chutney but this year I thought I would try something different and simple. This is super! I used orange juice with "lots of pulp" and added approx 1/2t cinnamon. Great!

Pork Stroganoff

We liked this a lot. I added minced garlic & a cube of beef bouillon to the sauce. I also cubed the chops & doubled the sauce and left the meat in the sauce instead of removing it while I made the sauce.

Homemade Lasagna

This was delicious! I altered the recipe a bit because I did not have some of the ingredients. I used all beef/no pork, Two 28 oz cans of diced tomatos, 1 can tomato paste, dried parsley flakes, 2 jumbo eggs, no parmesan but extra mozzarella, cut the salt in half, used Barilla's No Bake Pasta, part skim ricotta instead of cottage cheese and I was more generous with the other spices. Plus I added a layer of fresh baby spinach after the first layer of pasta. This is the first time I have made lasagna and I will stick with this recipe (with my alterations)!

Baked Pasta

This is easy and yummy! The left overs are even better because the spices in the sauce have time to blend. I used canned diced tomatoes instead of sauce. I did not let it cook as long as the recipe indicates so maybe that is why it did not end up dry on top as others have noted. Not sure how long I cooked it...I just took it out once the cheese was melted & bubbly on top!

Ground Beef Mexican Style

I used 1 medium white onion instead of the green onions and cooked it with the meat. I added comino, chili powder, seasoning salt and fresh garlic to the meat as well. I used medium chipotle salsa and yellow bell pepper instead of green. Also, I served this over rice instead of noodles. Easy and tasty!

Brown Family's Favorite Pumpkin Pie

Delicious! This is my first attempt at making pumpkin pie. It was light and fluffy...not dense like regular pumpkin pie. I used fresh pumpkin and I think it made the consistency too soft/wet but the flavor was outstanding! I think I will use canned pumpkin next time. FYI...this pie really grows in the oven!

Rhinelander Lentil Soup

My family loved this! I didn't have bacon so I used ham. If you don't stir it a lot it really sticks to the bottom of the pot. I will make this again!

Delicious! I used an 8x8 pan instead of the 9x13 the recipe calls for and cut the sugar in 1/2 (used 1/4 cup). I will be making this again!

Easy Chicken Rice Casserole

I thought it might turn out bland so I used 1 can cream of mushroom & 1 can of cream of chicken and added a teaspoon of thyme, pepper and paprika. I also added fresh garlic and onion to the rice mixture to liven it up. I used chicken pieces instead of boneless chicken and it turned out great! Not a quick fix though...it took 2 hours to cook.
