Easy Cream Cheese Danish

Made this last night, using low fat sour cream, and brought to church today. They were a HUGE hit . . . everyone loved them! Thanks for a great recipe!

Simple Scones

I never thought it was possible to make a delicious scone, but now I do! These are the best tasting scones I have ever had. Very moist and a perfect complement to a cup of coffee or tea. I have made these two times. The first time, the only change I made was replacing the raisins with 1/2 cup mini chocolate chips. The second time I again used chocolate chips (at the request of my kids), used reduced fat sour cream, and added vanilla since I read several reviews where vanilla was added; but honestly, I didn't notice a difference in taste. I don't have a food processor, so I grated a refrigerated cube of unsalted butter, and then placed the grated butter in the freezer until I needed it, and then mixed it by hand. So easy to prepare and does not take long at all! I will be making many more batches in the coming weeks, and hope to try other additions as other reviewers have suggested.

Lite Carrot Cake

This was very good, and moist. I went with other reviewers and used 2 cups of carrots instead of 1-1/2, applesauce in place of the oil, and adding 1/2 tsp. ginger, cloves, nutmeg and allspice. I used the cake flour and whole wheat flour as in the recipe and it came a great. I baked it in two - 8" square pans. Came out nice and thick and very moist. I didn't have frosting, but it tasted great without! I shipped a few squares to my father for Thanksgiving, so I'm hoping they'll make it there in one piece! Thanks for a great, healthy recipe!!

Molasses Sugar Cookies II

This is an excellent recipe!! The only change I made was using half sugar, half Splenda for the required 2 cups. I baked them for 8-9 minutes because we love our cookies chewy!! They were very chewy, although, I think crispy would be good with a cup of tea or coffee, too!! Thanks for a great recipe; a new addition to my recipe file!

Russian Tea Cakes I

I tried this recipe this afternoon and it turned out wonderful!! Better than the recipe I have used for years!! It really does just melt in your mouth!! I made no changes and was completely satisfied with the outcome! Even my husband commented on how they taste better than my old recipe!! We have always called them Snowball Cookies, so we'll keep our traditional name, but give credit to Odette!
