Parmesan Knots

These were tasty and very easy to make. They are definitely best served immediately, as the leftovers became just "okay." (but that's the case with just about any refrigerator biscuit) I'm anxious to try these next with frozen bread dough.

Apple Dumplings with Rich Cinnamon Sauce

These were absolutely delicious, and the sauce was so fast and easy to prepare. I made half with Gala and half with Granny Smith, and the tartness of the Granny's was far better. It balanced the sweetness of the rest of the ingredients. I served with a scoop of vanilla ice cream--pure bliss!

Sweet Sausage Marsala

This was delicious! I made a few modifications: I used at least a full cup of marsala, and additional can of diced tomatoes and about 4 oz. of tomato paste to thicken the sauce. The sauce is wonderful--my dinner guests sopped it up with bread and practically licked their plates! One shortcut - use the Birdseye frozen bagged mix that contains chopped red/green peppers and onions and save a few steps!

Cake Mix Cookies VII

I made these using devil's food cake mix and peanut butter chips. I found that the ingredient amounts were accurate, but I ended up adding a few tsp. of water to make this dough more manageable. Baking for about 10 minutes, then letting them sit on the cookie sheet for an add'l five minutes produced a delicious chewy cookie. This a great "quicky" recipe when you don't have time to mess with a ton of ingredients. I'm excited to experiment with this recipe--thanks!

Onion Rings

Didn't like this one at all! The breading ended up too spongy--soaking up the grease in the process. The taste was strange too--a little too "sweet."

Ground Beef Shepherd's Pie

As others have said, this is an excellent base for a delicious comfort meal. I used tomato sauce and a few squirts of ketchup in place of the tomatoes. Even if you use tomatoes, you'll need some ketchup or sauce--too bland otherwise. I also added a little extra garlic and a few good doses of Worcestershire sauce to the beef. Instead of just carrots, I use a can of mixed veggies, but that's just my preference. Then, just "power up" your 'taters with a dollop of sour cream. Have played with this one quite a bit, and it's now a fave with my boyfriend and I. Thanks!

Parmesan Potatoes

I wasn't crazy about these. The coating came out sort of chunky after baking (too much flour, I think) and too greasy for my tastes.
