Chef John's Christmas Miracle Fudge

Yum yum! This was delicious and much healthier than traditional fudge. Made it exactly as written but didn't have the silicone molds, so I lined a loaf pan with parchment paper and that worked just fine. I keep the fudge block in the freezer wrapped in cling wrap and just slice off a piece when I'm ready. This definitely isn't your traditional fudge as it needs to be kept cold, but it's yummy!

Mashed Potato Layer Bake

Great recipe. Made it just as written, with the exception that I baked the potatoes instead of boiling them. Gave the sweet potatoes full flavour. Prepared it the night before X mas, covered and left it in the fridge. The next day when we were ready for dinner, I baked it per the instructions but just a bit longer. I will be using this as my mashed potato recipe when I'm cooking for more than 2.

Quinoa Stuffing

Absolutely delish! I made this as a side for our Christmas Eve dinner and everyone was raving about it. Made it exactly as described, but found that the cooking time for the quinoa was longer. I would definitely make this again.

I had two cups of fresh cranberries to use up and this was the perfect recipe. I used all 2 cups in this recipe. Bread was moist and delish.

Cottage Pudding - Upside Down Cake

Fantastic recipe. I doubled the brown sugar & butter topping, and used pineapples and marchino cherries. Hubby loved it and said it was like the one his Nana used to make! This is a very forgiving recipe, but I did make sure to not invert immediately. I let it stand for exactly 10 mins, and then inverted. It came out perfect.

This is amazing. I used it to frost an almond scented layer cake and it was perfect. I added a bit jmore superfine sugar, but that's just a matter of personal taste.

Vegetarian Tofu and Nut Loaf

This was an okay recipe. The texture was nice and similar to meatloaf, but I found the taste a bit off putting. I think it was the onion soup mix that I didn't like. I will try to figure out something else to add instead of that.

Potato and Bean Enchiladas

These are fantastic. Had my mum and dad over for dinner and they loved it! And they are super picky. Will definitely make these again. I used a mandoline to shred the potatoes, instead of dicing them.

This was an alright recipe. I found the cake part to be dry. I wish it were a real "from scratch" recipe. I think that would have solved the dry cake issue.

Apple Pie by Grandma Ople

This is wonderful. Classic all american apple pie. I placed the lattice crust on top last, as opposed to pouring the liquid over it. Glad I did, as It was nice to be able to taste the pastry among all those apples!

Addictive Sweet Potato Burritos

I made this without tortillas, Almost like a layered casserole. The spices were nice, but the taste was just too weird for me. I used black beans, as suggested by other reivewers, but the sweet potato flavour was just too overpowering for me (and I love sweet potatoes).

Absolutely delicious. Made this for a friend who came over for dinner, who is gluten free. It's a really soft cake like bread. I couldn't find any pepper jack cheese, so i used monteray jack, instead.

Sopapilla Cheesecake Pie

Hubby loved this. it's delish, easy substitue if you're craving cheesecake, but don't want the fuss. It was a bit too sweet for my taste, though. I think I may omit the honey, or cut the sugar in half next time. Definitely doesn't need all that sugar plus honey. Also, I used regular vanilla extract and it was fine. I'm waiting for my new rolling pin to arrive in the mail, so I just stretched and pressed down the dough with my hands, and it turned out fine.

Luscious Four-Layer PHILLY Pumpkin Cake

Awesome! I doubled the cake batter, because other reviews said the cakes were too thin to slice. I didn't really have to, though. When the cakes came out of the oven, I thought they'd be ok to slice. Regardless, this was the hit of (Canadian) Thanksgiving! I also iced the top of the cake, and then placed pecans on the outside edge of the cake. Beautiful presentation and relatively easy to make.

I've made this as written, but I once made it with what I had on hand and I liked it way better: 15oz can of diced mango in place of pineapple, and raw cashews in place of the walnuts. So good. The base recipe is so easy and simple, that you can change the fruit and nuts for anything.
