Thighs on Rice

As another reviewer stated, this is a good base recipe and it can be made into many variations as desired. For a quick meal, I added frozen diced mixed vegetables, sautéed fresh mushrooms, dry white wine, can of cream of chicken to give it a creamy texture and my own chicken stock which I make ahead and keep in the freezer. Added parsley, thyme & basil. It made a hearty meal and was so easy to prepare. Family really liked it.

Spinach Quiche

I used fresh mushrooms and Swiss and Gruyere. It was delicious. Next time, I'll make it without the crust for a healthier version. Think I'll add some red and yellow bell pepper. Will bake in a square Pyrex dish, then slice into single serve potions and freeze.

White Cheese Chicken Lasagna

This is a very nice white sauce. Made this lasagna for my family and they really liked it; will be making it for guests this weekend. I tweaked it by stirring 2 lightly beaten eggs into the ricotta. The eggs make the ricotta more spreadable. Used 1/2 Lb fresh spinach, parboiled & well drained, instead of frozen spinach. The fresh spinach is so much tastier than frozen and no more work. Lastly, I used ground chicken which I sautéed with 1 cup cooked onion and a little fresh garlic; we love ground chicken and it is great for casseroles. Think I will add a little white wine to the sauce for another flavor dimension next time.

Chef John's Italian Meatballs

These meatballs are delicious. I used 2# ground beef and no pork and left out pepper flakes. Baked them as directed and cooled. Served them on a long loaf of French bread which I had removed some bread so the meatballs would nestle in the loaf. Before adding meatballs spread a light coating of pesto on top and bottom, added meatballs and topped with provolone. Added another very light coating of pesto to top of loaf. Wrapped in foil and baked for 30 -40 minutes at 350. This sandwich was a huge hit with my family. Served with hot broccoli cauliflower beer cheese soup and tossed salad.

Easy Turkey Tetrazzini

I made changes before I tried this recipe and my family really liked this dish. I sauteed fresh mushrooms (canned are over cooked), used cream of asparagus soup instead of cream of mushroom and I added a can of drained whole black olives which I sliced in half. I also added a cup of water as the mixture was too dry. This recipe is filling and easy for a quick Sunday evening dinner.
