Muffin Frittatas

Made these last night to keep in the fridge and pop in the m/w for breakfast, I had a 1/2 roll of Jimmy Dean Hot Sausage so I cooked that up and added to the batter, they were very good this morning and very easy to make, not so sure I would make them without some type of breakfast meat.

Easy Mini Quiches

These are pretty good. I used ham instead of bacon and cheddar instead of american, I also added salt and pepper to the batter, a little too muffin like to me, so next time I may cut back on the baking mix or add more egg. This is a great thing to grab out the fridge, pop in the microwave and eat before you run out the door in the morning.

Blooming Onion and Dipping Sauce

Yummy! I did onion petals because I did not think is was worth the time to go thru the steps of a blooming onion, I tried battering just once, did not turn out that great, but on the 2nd batch I did the double batter and those turned out really good, so I recommend that highly. For the dipping sauce, I only used 1 & ½ tablespoons of horseradish sauce and that was plenty for my taste (it was still strong), I also added an extra ½ tablespoon of ketchup after tasting and an additional 1/3 teaspoon paprika for more color. REALLY GOOD STUFF.

Slow Cooker Buffalo Chicken Sandwiches

OMG good!! Just made for the first time and it was great. I used Moore's medium Buffalo Wing Sauce, poured 3/4 of a 16 oz jar over the frozen chicken breast, shredded chicken when I got home from work and added about 4 to 5 tablespoons of my homemade ranch dressing. When ready to eat, toasted buns, and topped buffalo chicken with blue cheese dressing, wonderful, all the great buffalo chicken flavor without the breading and deep frying. I recommend highly.

Pumpkin Cream Cheese Muffins

I did as others and added an additional 1/2 block of cream cheese, I also added pumpkin spice to the batter, put small amount of batter in muffin pan, added cream cheese mixture then another layer batter, topped with the pecan brown sugar mixture, YUMMY, my picky hubby would not even taste them because he saw the recipe and when he read "Pumpkin" he refused to try them. Everyone else who had them said they are great. A little extra work, but worth it, I ended up with 24 cupcakes.

Creamy Macaroni and Cheese

Definitely creamy, creamy, creamy, maybe a little too creamy. I did not like the mustard at all and not real crazy about the parm cheese. I will try again and use more noodles, no mustard and no parm.

Aunt Bev's Famous Apple Pie

Made this for my son's birthday, he loves apple pie, he said it was really good and ate two slices. I used corn starch instead of flour (which is how I make blueberry pie) and the pie was a little runny, not too bad, but I think next time I will use at least 3 tablespoons of starch. When the pie was done, I brushed on some corn syrup that I thinned slightly with a small amount of hot water, then sprinkled cinnamon sugar on top, put back in the oven for 3 minutes, so the top was shiny and glossy.

Roasted Chickpeas

Just took these out of the oven, can't believe how crunchy they are, they do remind me of corn nuts (which I love). I cooked mine at 375 for 1 hour, none popped and all are cooked to the crunchy state. Will make again and use more salt, I used garlic salt and cayenne pepper, tasted halfway thru when I shook the tray, sprayed with PAM and sprinkled with regular salt, but I think it needed more salt at the first stage. Put mine in a gallon zip lock bag, shook to coat, put on a pan with foil...no clean up:)

Tomato and Mozzarella Bites

Excellent, no other ingredients go together better. I made them for Mothers day, I put them on a platter, drizzed with olive oil and course sea salt. So good, they were gone in about 15 minutes

Salmon with Lemon and Dill

Excellent. Made this for dinner last night, cook time was perfect, it was tender and flaky (I normally overcook Salmon), I will be using this recipe from now on. Served it with Pan-Fried Asparagus from this site, wonderful dinner.

Pan-Fried Asparagus

This was great. I love Asparagus but my hubby does not so I never buy it, but he was not going to be home last night so I bought a bundle. This is my first attempt at cooking asparagus and it was easy and tasted wonderful. I had it with baked salmon, wonderful dinner I made for myself.

Blackened Salmon Fillets

This was pretty good. I only used ½ of the cayenne pepper called for, but I think it would have been fine with the total amount. I used olive oil and added a pat of butter at the end. I cooked in a pan on the stove top over medium low heat (no smoke involved) 7 minutes per side. It looked really yummy and the salmon was cooked perfect.

Baked Teriyaki Chicken

Really good. I don't normally like anythihng Teriyaki because it is so sweet, but this was really good. I used 1/2 the sugar (I actually used splenda) the recipe called for, and low sodium soy sauce. I put thighs in a foil pan, poured the sauce over the top and turned the chicken in it a few times, covered with foil, baked for 25 minutes, turned thighs, returned to oven for another 25 minutes uncovered and they were great, skin was crispy and meat was tender. I served these with fried rice. I doubled the sauce as mentioned by so many viewers, but I don’t think it was necessary.

Bacon Wrapped Smokies

Made these for Super Bowl Sunday, they tasted great, but I am giving them only four stars because the cooking time was way off. I put them on a cooling wrack on top of a foil lined baking sheet, I turned them halfway thru and at the end of the cooking time, the bacon was still not done, I turned them again and cooked for 30 more minutes. I will try and find extra thin bacon next time or bump up the oven temp. But as far as taste, they are great.

Frank's® Red Hot® Buffalo Chicken Dip

Tried this for Super Bowl Sunday, it was really good. I had left over chicken breast in the frig so I used that (never used canned chicken and don't want to even try it). I only used 1/4 cup of the hot sauce because of some people not liking really hot/spicy food (I am one o of those people), and it was perfect, hubby added more hot sauce to his. We had it with tortilla chips, really, really good.

Beef Barley Lentil Soup

I did not care for this recipe, maybe it was the Lentil's, I have never cooked with them before, but we ordered take out. hubby would not ever try it. On a good note, very simple to throw together.

Broccoli Beef II

Not a fan of this one. I followed the recipe to the T, but the steak was a little tough and the overall flavor was just OK. It was very simple to make, but I won't be keeping this recipe. Maybe it would be better with chicken?

New Potatoes with Caper Sauce

These are great. I love capers and never thought about paring with potatoes, it was excellent. I did not add any vinegar b/c I was out and the capers were in a vinegar brine, so I used a little of that. Will be making these as a side for many dinners.

Microwave Corn on the Cob

I have been using the Ziplock Steamer bags to cook corn in the m/wave, you don't need to wet and wrap in paper towel, just throw it in the bag with butter and seasoning for 7 minutes (2 per bag) and it is perfect. I also found corn in my grocery store last week, already cleaned and in a tray, you just throw the whole thing in the m/wave and cook, either way is easy and the corn taste great. Never boil on the stove again.

Awesome Slow Cooker Pot Roast

I do a roast very similar to this one, I use Golden Mushroom soup instead of Cream of Mushroom (the golden soup is much beeter in this recipe) and I use 2 envlelopes of onion soup mix and NO water. I add carrots, onion and quartered potatoes and it is excellent.
