Apple Brownies

These are in NO WAY brownies... more like cake. They were good, but I already have an Apple Cake recipe at home, so this was a bit disappointing. I did follow the recipe tho' I was not sure how to make the butter/sugar/egg mixture "fluffy" if the butter was melted. I also tried to make the mini muffins as shown. Altho' I greased the pan, they are completely stuck in there. Maybe because they are more cake-like, I needed to butter & FLOUR the pan

Chocolate Zucchini Cookies

love sneaking veggies into the kids. I will experiment with these a bit to see if I can make them a little less cake-like (aka less crumb mess), but they were good. Did take the idea of others and added a cup of choc chips. I may try substituting apple sauce for the some/all the butter and see how that comes out. THANKS!

Slow Cooker Mole-Style Pulled Pork

I have to first say that I made this tonight using a much smaller piece of left over pork (about 1lb), so I downsized all the ingredients. I also just simmered on the stove since I was using leftovers and did not need to actually cook the pork. I thought the flavors were great. Moles are usually very complicated and they do vary in taste greatly from recipe to recipe. This recipe was easy and had a nice result. I made some spanish rice and corn and we used those items in the burritos too!

Egg Noodle Lasagna

I tried this because it was rated well in reviews and I thought would be easier for my young twins to eat. I don't know how people keep the noodles from completely dissolving and becoming mush. Honestly, it was a wreck.

Zucchini Ranch Meatloaf

I thought this was very good! I'm not a huge meatloaf fan and I even liked the leftovers. I used all beef and actually shredded the onion the 2nd time I made it since it was quicker than chopping it. I also use Ian's Panko breadcrumbs since they are the only brand I can find without trans fats or corn syrup in them.

Indian Pork Chops

This dish was very easy to make. The pork was very tender and tasted as though alot more time and effort went into making it. The recipe calls for 1 CUP of oil which seems VERY odd... I only used about 1T so that I could saute the pork first. Thank you for the recipe!
