Pumpkin Soup

I had lots of leftover pumpkin after Halloween last year and I was determined not to let it go to waste. I looked around for recipes here and decided to try this one. Glad I did! It was delicious and heated up well. I know I'll make this again next year.

A Hearty Green Bean and Sausage Casserole

I used fresh green beans which gave it a nice crunchy texture. I found it too salty and will probably leave out the middle layer of french fried onions the next time around.

Mini Pineapple Upside-Down Cakes

I loved these little guys, and they were a hit at the Labor Day lunch I took them to. I put the cherries in with the brown sugar and pineapple. Since I was using regular cupcake pans I couldn't get the pineapple rings to fit very well, so I ended up quartering each ring, then putting two quarters at the bottom of each cupcake ring opposite each other. Worked perfectly! I also used 3/4 cup pineapple juice and 1/2 cup water, instead of the 1 1/4 cups pineapple juice, so the batter was sweet, but not overly so. I think they turned out perfect, and with these updates will definitely make them again!

Scrambled Egg Brunch Bread

I used turkey bacon instead of ham and the layer was just too thin. I'll definitely double up on the bacon next time. The bread turned out nice and golden brown, but a little too crunchy for my tastes. Next time I will cut down on the baking time by 5 min to see if that helps. Overall this was a great recipe and easy to make. I also used kitchen shears and put a little cooking spray on my parchment paper to make the cutting and folding process easier.

Cheddar Baked Chicken

This is a household favorite, and so easy to make. I almost always have the ingredients on hand. I added a sprinkle of basil to mine, and it came out delicious. It's a must have for quick weekday meals.

Hashbrown Casserole

Multigrain Pancakes

These were phenomenal! I doubled the milk and didn't have any cornmeal home so I doubled the all purpose flour instead. Following everyone's advice I used a bit extra cinnamon (a heaping teaspoon) and a couple sprinkles of nutmeg. I made 6 perfectly shaped, thick medallions out of this recipes, which made for a nice breakfast for two. This one is already in my recipe book and will be a saturday morning staple!

Lasagna Alfredo Roll Ups

I took this dish to a work food day and man did I get compliments! It was a great ice breaker b/c this was a new job so people got to know me by asking who made the lasagna roll-ups. I've made it several times since then and always mix half sun dried tomato alfredo sauce in with regular marinara instead of straight alfredo sauce. Layer it for a gorgeous presentation (and the flavor is much richer if you use the marinara as well).

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe was easy to make and turned out tasting absolutely delicious. The only part I would tweak is the amount of garlic. I put in three additional cloves for my 8 serving meal.

Pumpkin Chocolate Chip Cookies III

Love this recipe, just made a double batch, one with semi-sweet chocolate chips and the other with butterscotch morsels. I have to say, the butterscotch are far superior to their semi-sweet competitors. I also only used 1 cup of morsels as I think they should be accent and leave the emphasis on this delicious soft pumpkin cookie! And instead of 2 tsp ground cinnamon I used 2 tsp pumpkin spice. Definitely keeping this recipe around!
