Spinach and Orzo Salad

Only thing I changed was to add some garlic salt to the salad and use pepitas instead of pine nuts. Very tastey!

Eggplant Rollatini

I have never had eggplant, thought this was a good recipe. I sweated it for about 45 mins and broiled it instead of frying. Also added garlic, parmesan cheese and some fresh basil/parsley to the ricotta. Will try this again.

Sausage Pasta

Awesome and super easy. I used turkey sausage and a can of diced tomatoes w/green chilis (hot), flavor was great. We did not have any parm cheese, so just added a little feta before serving. We will be making this again. Thank you for this easy/healthy meal!!!

G-ma's Rice

We have tried several rice recipes.....this is our favorite. Came out fluffy, not mushy like others. Did use HOT water too, maybe that's why? You do need to add salt, was a little bland, but was nice to alter to our taste...added a spicy salt mix. We will definately use this recipe again!

Mama's Asian Chicken and Rice

VERY tastey. Did as other suggested and doubled the sauce (but not the heat part and slurry), floured the chicken too. We also threw in some broccoli during the last 15 mins with the sauce and chicken. Both kids had no problem eating this. It's a keeper. Thanks Scarlett for sharing!

Delicious Ham and Potato Soup

Easy and delicious. The only change I would make would be to boil the celery first for a bit, they took a bit longer than the potatoes. Thanks for a healthy and yummy recipe!

Pie Iron Tacos

we tried both corn and flour tortillas, both were great. nice thing about the shells is that you don't have to watch them like bread, they never burned on us. we had some w/ground beef and other w/chicken. was a nice change from the usual burgers and dogs while camping.

These burgers were GREAT! Used pretzel rolls instead of english muffins, topped w/blue cheese, bacon and spinach. This is probably our favorite burger. Thanks for the recipe.

Addictive Sweet Potato Burritos

Like others, I was a bit nervous to give it a try......glad we did. Somehow I was out of Chili powder so I added curry instead and a little salt (had low sodium soy sauce). We also added some chopped tomatoes and jalepenos to the beans (cooked them w/the spices) and threw in some cilantro and sour cream with the sweet potatoes. Layers were sweet potatoes, cheese, slices of avacado, and beans. It was a nice change from your regular burritos. Must be catching on, Diners, Drive-ins, and Dives had bean and sweet potato burritos on their eppisode last night. We'll definately be making this one agian, thanks Karena!!!!

Asian Coleslaw

I'm not sure if I should be rating this, I'm basing my rating on the sauce. I used broccoli slaw instead and also made them into wraps. Mixed the sauce with the slaw, green onion, cilantro, diced chicken and some chow mein noodles. They turned out great, just wish I would have made more of that sauce. Thanks for the recipe.......even though I didn't follow it to a T!

VERY good, did as others and cut back to 1/2 lb. pasta (used mini penne) added fresh spinach and an extra can of navy beans. Not only healthy, but yummy!!

Mulligatawny Soup I

First time trying Mulligatawny....Soup was great. I used 1/2 and 1/2 and doubled as other did. I think next time I'll use olive oil instead of butter. Nice change from the usual soups. Thanks!!!

Taqueria Style Tacos - Carne Asada

Fabulous!!!! I did make one major change, used pork instead. We had a pack of pork steaks and thought to give them a whirl. Was a bit nervous, but trimmed the fat, took out the bones and all was good. Marinated them for about an hour then covered them (with the marinated) with foil and baked them at 300 for about 4 hours. They just fell apart. The sauce and relish were both great too. Thanks for the great recipe!

Homemade Black Bean Veggie Burgers

VERY good, it was a nice change from a regular hamburger. Did as other suggested, rinsed and dried the beans and also drained the veggies after they were in the processor. After combining the ingredients it seemed like it needed more bread crumbs, we added about 1/4c wild rice, that helped a lot. My 10 and 8 year olds loved them, the 8 year old helped and used a potato masher for the beans...had some whole and some mashed beans. Will be making this again!!!!! Thanks for the great recipe.

Blue Cheese Chicken Wing Dip

Very good, went over well at our running club. I did add extra chicken and cheated by using a rotisseri chicken. Also did as other suggested and heated it up and placed it in a crock pot. It was a nice change from the usual dips, thanks for a fantastic recipe!
