Northern Fried Green Tomatoes

We've made this twice recently. I have to admit, our flavor palette is not Southern but we do love southern dishes with a Canadian flair. Personally, I do not care for cornmeal so when a traditional recipe like this called for breadcrumbs and parmesan, I had to try it. I also object to deep frying for health reasons. So I pan fried these in a non-stick pan with a bit of Pam and they turned out fabulous. That was why we had them twice! And the second time, I inadvertently used a tablespoon of garlic powder vs a teaspoon. DH says I can double that again, next time.

Blackened Shrimp Stroganoff

I made this last week on Valentine's Day. Of course, it's a recipe, so that means it's just a guide, right? Used scallops because that's what I had. It was wonderful! We've been looking for a good pasta dish w/o tomatoes or tomato sauce but hadn't come across one we both liked. I used some Mrs Dash instead of the seasoning. A keeper!

Parmesan Crusted Tilapia Fillets

Excellent! I used this reciped for red snapper fillets last night and it was very, very good. It needs a bit more zip for our taste buds so, as recommended by the originator of the recipe, I'll try some garlic and perhaps some tumeric and quite a bit more pepper next time.

Eggnog Custard

I really liked this recipe. I followed the recipe exactly, put my pan of water in the oven while it was preheating and ended up baking for the full 45 minutes. Lovely texture and flavour and too easy to make; I kept checking the recipe to make sure I hadn't forgotten anything as it's so simple. I grated fresh nutmeg on top and it browned up almost like creme caramel. Thanks!

Pasta Fagioli

I have this simmering as I write. And of course, I have tasted it; well, actually, after the first taste I got a bigger spoon so I could try more! It is excellent. I used my own chicken broth and a large can of diced tomatoes and I've chopped up left over pasta. I'll serve it with a some garlic toast for a very late supper with DH when he gets home. He'll love it.

Robin's Best Ever Hummus

OMG! So good I was transported back to Jerusalem in 1979 eating this on a restaurant patio. Based on the recommendations I cut the salt in half and I'm glad I did; it was perfect. Thank you, thank you, for this recipe! We've already made it 3 times and have received rave reviews. If you've tried "store-bought" hummus and thought it was yucky, yes, it was! Try this recipe; it's easy and absolutely delicious.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

Excellent Soup! I used Patak's curry paste and omitted the cheese (too many calories for me) and it was wonderful. I added a small jalapeno pepper and sauteed all the veggies first. A pleasant change. Two bowls of soup and a lovely pumpernickel bun made a perfect late night supper. Thanks

Ciabatta

Wonderful flavor and texture. I've made this twice this week, trying to duplicate a commercial ciabatta bun but I'm not getting the shape right as this dough is sticky to work with! I'll be making it one more time as I think I've got it figured out. Meanwhile we love this easy recipe.

Chicken Asparagus Roll-Ups

I haven't made this yet, but I'm very intrigued as it sounds yummy. The fat content is terribly high but a little less cheese and a light mayo will likely take care of that. I would NOT omit the tarragon as it has a wonderful light, lemony, herb-y flavor that can't be beat!

Chicken Tava from Turkey

Like most folks I found this a bit bland, had to add lots of Tabasco and black pepper to make it palatable. Sorry, not a keeper for me it would take too much tweaking to get it to something we'd enjoy eating.

Chocolate Trifle

This just had no wow factor. It was OK but I wouldn't go to the bother of making it again. I made all the components from scratch as our grandson has nut allergies and I hoped this would hit our daughter's chocolate tooth but it wasn't chocolatey enough and not worth all the calories. It did look pretty.

Jalapeno Popper Spread

I can hardly wait to try this; it looks marvellous and just what is needed for our very cool fall parties. We have several friends who love the jalepeno poppers but this is a more interesting presentation. I've read most of the reviews and I'll stick to the recipe, maybe with more jalepenos for the extra kick!

Savory Garlic Marinated Steaks

Well, this was not a hit in our house, although I really liked it, but DH told me it wasn't a keeper; he found the balsamic vinegar overpowering and made the meat taste "gamey". I'm keeping it anyway but will only likely make it for myself when he's away.

Blueberry Oat Cookies

Easy and fun to make. I used dried berries as I had them but I forgot the cinnamon; still excellent. Shared them with a neighbour who immediately asked for the recipe. I had no problems with the berries sinking or burning, perhaps because they were dried? I can't wait to make them again with the cinnamon!

Curried Chicken 'N' Broccoli

Like lots of others, I opted for baking instead of using the microwave and made a few minor changes. Since we prefer our vegetables still fairly crunchy, I placed the the broccoli in the bottom of the casserole, added browned chicken breasts, cubed, used cream of mushroom soup, no salt, light mayo, 1 tbsp Patak's extra hot curry, and used light Philly on top. Baked, covered, at 350F for 30, added parmesan and baked another 10 minutes until slightly browned. Yummy! We could have eaten double!

Crab Crusted Grouper

This was pretty good; could have been better if I had followed the instructions! Trying to cut down the fat, I eliminated the butter but covered the dish in the oven to keep the fish (used fresh Manitoba pickerel) moist, then removed the cover, added parmesan and finished browning under the broiler Very tasty, but missing the smooth fat taste from the butter. A keeper , though, so thanks, it's a good change.

Bacon Ranch Pea Salad

Served this with pork osso buco and had to hand out the recipe! The left overs were even better the next day, so I would make this up a day ahead in the future. Even better with parmesan grated on top.

Osso Buco

I first had Osso Buco in the DR and thought I'd died and gone to heaven so I was determined to make it at home. Veal shanks are very rare here and wickedly expensive so I gave up until I had it made with pork in an Italian restaurant in Park City, Utah, recently. My butcher tells me that pork shanks are pork hocks, skinned, so after I conned DH into skinning them I cooked them in the slow cooker with this recipe, subbed 1/2 water for 1/2 c wine and dared to serve them to guests for my first try. They HAD to have the recipe! It was marvellous and definitely a keeper. Thanks!

Roasted Cajun Potatoes

Made this with cajun spiced sole fillets last night, mainly to compare the spice combination in this recipe to my package Cajun spice. There is no comparison. The spiced fish was bland compared to these potatoes. A keeper in this house, for sure! Thanks for a new take on oven fries.

For Barbedwards: I imagine an allergy to lemon would include all citrus but if not, white grapefruit would be a refreshing flavor, or lime. Otherwise, leave it out and stress the garlic flavor by adding 2 or 3 more minced cloves.
