Chicken Asparagus Roll-Ups

I haven't made this yet, but I'm very intrigued as it sounds yummy. The fat content is terribly high but a little less cheese and a light mayo will likely take care of that. I would NOT omit the tarragon as it has a wonderful light, lemony, herb-y flavor that can't be beat!

Chicken Tava from Turkey

Like most folks I found this a bit bland, had to add lots of Tabasco and black pepper to make it palatable. Sorry, not a keeper for me it would take too much tweaking to get it to something we'd enjoy eating.

Chocolate Trifle

This just had no wow factor. It was OK but I wouldn't go to the bother of making it again. I made all the components from scratch as our grandson has nut allergies and I hoped this would hit our daughter's chocolate tooth but it wasn't chocolatey enough and not worth all the calories. It did look pretty.

Jalapeno Popper Spread

I can hardly wait to try this; it looks marvellous and just what is needed for our very cool fall parties. We have several friends who love the jalepeno poppers but this is a more interesting presentation. I've read most of the reviews and I'll stick to the recipe, maybe with more jalepenos for the extra kick!

Savory Garlic Marinated Steaks

Well, this was not a hit in our house, although I really liked it, but DH told me it wasn't a keeper; he found the balsamic vinegar overpowering and made the meat taste "gamey". I'm keeping it anyway but will only likely make it for myself when he's away.

Blueberry Oat Cookies

Easy and fun to make. I used dried berries as I had them but I forgot the cinnamon; still excellent. Shared them with a neighbour who immediately asked for the recipe. I had no problems with the berries sinking or burning, perhaps because they were dried? I can't wait to make them again with the cinnamon!

Curried Chicken 'N' Broccoli

Like lots of others, I opted for baking instead of using the microwave and made a few minor changes. Since we prefer our vegetables still fairly crunchy, I placed the the broccoli in the bottom of the casserole, added browned chicken breasts, cubed, used cream of mushroom soup, no salt, light mayo, 1 tbsp Patak's extra hot curry, and used light Philly on top. Baked, covered, at 350F for 30, added parmesan and baked another 10 minutes until slightly browned. Yummy! We could have eaten double!

Crab Crusted Grouper

This was pretty good; could have been better if I had followed the instructions! Trying to cut down the fat, I eliminated the butter but covered the dish in the oven to keep the fish (used fresh Manitoba pickerel) moist, then removed the cover, added parmesan and finished browning under the broiler Very tasty, but missing the smooth fat taste from the butter. A keeper , though, so thanks, it's a good change.

Bacon Ranch Pea Salad

Served this with pork osso buco and had to hand out the recipe! The left overs were even better the next day, so I would make this up a day ahead in the future. Even better with parmesan grated on top.

Osso Buco

I first had Osso Buco in the DR and thought I'd died and gone to heaven so I was determined to make it at home. Veal shanks are very rare here and wickedly expensive so I gave up until I had it made with pork in an Italian restaurant in Park City, Utah, recently. My butcher tells me that pork shanks are pork hocks, skinned, so after I conned DH into skinning them I cooked them in the slow cooker with this recipe, subbed 1/2 water for 1/2 c wine and dared to serve them to guests for my first try. They HAD to have the recipe! It was marvellous and definitely a keeper. Thanks!

Roasted Cajun Potatoes

Made this with cajun spiced sole fillets last night, mainly to compare the spice combination in this recipe to my package Cajun spice. There is no comparison. The spiced fish was bland compared to these potatoes. A keeper in this house, for sure! Thanks for a new take on oven fries.

For Barbedwards: I imagine an allergy to lemon would include all citrus but if not, white grapefruit would be a refreshing flavor, or lime. Otherwise, leave it out and stress the garlic flavor by adding 2 or 3 more minced cloves.

Sweet and Spicy Green Beans

Excellent! I'm dieting so this was a very tasty recipe for those low fat green beans, bringing them in at 1 point per serving so I was able to eat 2 servings to feel a bit more satisfied. Thanks for some flavor!

Mediterranean Greek Salad

Excellent and easy to make. I rolled some long cucumber slices around an olive and stuffed it with sundried tomatoes for garnish. Went really well with the Greek Garlic-Lemon Potatoes from this site and part of my Greek themed dinner. The leftovers were even better the next day!

Greek Garlic-Lemon Potatoes

Really yummy! My potatoes browned up considerably and my oven temperature is bang-on, so I turned it down to 350F for the last bit, while still turning and basting frequently. Otherwise they would have burnt. Rave reviews from my dinner guests.

Simple Ranchy Breaded Fish Fillets

I made this for a friend for lunch yesterday and she loved it. Great timing on the recipe as I had some frozen tilapia and she had mentioned that she'd never had it. I followed some of the other reviews and tried to "lighten" the recipe. I used the crumbs mixed with some dry ranch dressing, dipped the fillets in skim milk then the crumbs, baked for 25 minutes at 350 and they were perfect, nice and moist! Even better than my old recipe that I've now thrown out. Thanks!

Simple Cauliflower Soup

Perfect! I did a search using cauliflower, potatoes and milk as we were cleaning out our fridge in anticipation of a holiday and I had this big head of cauliflower to use up. Made this soup, pureed with a wand blender in the pot, and we had it with a bit of garlic cheese toast. Only added more pepper and tabasco. Great & easy keeper! Thanks for not having to throw out a whole head of cauliflower!

Spinach Quiche

Made this for a late supper, added 1/4 finely chopped onion, used a mixture of mozzarella and cheddar cheese & omitted the croutons because I'm not a fan. I sprinkled freshly ground black pepper and fresh nutmeg on top. Baked it for the full time & then let it rest for 10 minutes before cutting. Now I wished I'd taken a picture because it was picture perfect, but we were hungry! DH said it's a keeper and I can make it again anytime. Easy, too!
