Greek Pasta

I feel the olives and feta are optional. (If someone in the family doesn't like them, the recipe is still very do-able.) The tomatoes don't really have to be blanched. Next time I'll just cut them up. This also works with Basil instead of Oregano. For a variation, add marinated artichoke hearts.

Good recipe with a home-cooked feel. I'd reccommend more vegetables (whatever kind you like that you have around), and a little less tomato sauce. I used cheddar instead of mozarella and it worked well.

I made mine in cupcake form. For large cupcakes, bake 20-25 minutes; for small cupcakes, bake 12-16 minutes. This makes it easier to pack into lunches and share at work. Great flavor!

No Cholesterol Chocolate Chip

I accidentally left out the chocolate chips, and I think I actually like them better! The cinnamon is the feature flavor. I also used only whole wheat flour.

I expected this recipe to be better. There are a lot of great flavors going into this dish, but the whole was less than the sum of its parts. I agree that the recipe calls for too much pasta. 8 oz of any type pasta would work.

Best Toffee Ever - Super Easy

Great recipe and very quick! If you do not use a candy thermometer, err on the side of taking the butter mixture off the heat too soon. I think I waited a few seconds too long and it gave it a bitter taste. Good with slivered almonds.

Pasta with Tuna, Sun-Dried Tomatoes, Artichoke Hearts, Lemon, and White Wine

A great way to serve tuna (I used canned and it sure beats the regular sandwhiches.) The lemon flavor was in good proportion to the other flavors. Overall, a flavorful dish but a bit too much work for the outcome in my opinion. This took me a long time to prepare. In step three, leave more liquid than 3/4 cup; I thought the sauce was a bit too pasty. Also note that if you use dried thyme you should use only 1/3 what is called for. (This is the standard fresh-to-dried ratio for herbs.)

Salmon Fettuccini with Blue Cheese and Olives

Got great reviews with the family. A good dish and not a whole lot of work. Be sure to de-bone the canned salmon! (I didn't realize it came with bones.) Feel free to add more of an ingredient according to your taste. A little extra blue cheese as topping would be a bonus.

Microwave Caramel Popcorn

Good taste, bad texture! Carmel corn should be crunchy, not soggy and chewy, which is the way this turned out. Maybe using less glaze in proportion to popcorn would help?

Salt and Garlic Bagel Chips

Lots of flavor and easy to make. I used "everything" bagels and the Kraft grated parmesan cheese. I'd use more garlic next time, and maybe garlic or onion salt.

Bacon is optional. I found it wasn't necessary to bake it. To speed things up, cook the pasta while browning the beef, then just stir into the mix.

Awesome Bow Tie Pasta

Asparagus, Chicken and Penne Pasta

This dish definitely needs additional flavor. My crew was happy with kalamata olives and fresh tomatoes. For extra olive flavor, pour in some of the olive juice. Also note that the spiceyness diminishes after a day in the fridge.

Broccoli Potato Bake

Pretty blah; definitely needs more vegetables like mushrooms or tomatoes. Also needs salt and pepper. Consistency was pasty and none of the individual flavors stood out. Could be better with cheddar or colby jack cheese. Find a better recipe; they're out there!

Chocolate-Covered Cherry Cookies

Excellent! Frosting is optional. Half the amount of frosting is sufficient; we even had some left over! I rolled the dough into round balls before baking to give them a nice smooth look.

Smoked Sausage with Pasta

I couldn't find smoked sausage, so I used artichoke chicken sausage. I used only 13 oz of sausage and felt it was plenty. I suggest doubling the tomatoes. Feel free to add other vegetables as well. This is a very quick dish -- the mixture will be ready by the time the pasta is!

Caramel

I used International Delight Hershey's chocolate caramel flavored coffee creamer. I also used 1/2 C brown sugar. The taste is GREAT! The first time the caramel came out too soft, so I put it back in the pot and reboiled. It came out fine. (I never could get it to ball and flatten like the directions say.) Tip: use a bigger pot than you think! It expands and bubbles quite a bit, and if it overflows on the oven it's a real pain to get off. Also, be sure to butter the wax paper very well, or it will stick. Next time I'll spoon the mixture onto little pieces of wax paper before it cools. (Maybe buttered waxed paper in mini muffin tins would work?) This way you don't have the pain of cutting it and getting that waxed paper off before wrapping the individual pieces.

Irish Potato Casserole

I used olive oil instead of butter and it did NOT turn out at all. It was very oily. Hopefullly it's better with butter. If I made it again, I would add broccoli or some other vegetable and more cheese.

Whole Wheat Apple Muffins
