Vegetarian Chickpea Sandwich Filling

A tasty alternative to egg salad or chicken salad - and without the goopey consistency that comes with too much mayo! Hooray. I suggest red onion. I added fresh tomatoes, mushrooms, and cucumber slices to my sandwich. Pocket pitas would make this easier, but any pita is perfect. I used a pastry mixer to mash the chickpeas, which works well. I also left out the dill.

Slow Cooker Vegetable Chili

Where is the liquid? I was sure the vegetables were going to burn in my slow cooker, so I added 2 cups of vegetable broth. I advise anyone to add a minimum of one. I also used two cans of diced tomatoes to make them spoon sized. Very healthy and tasty!

Hot and Sour Tofu Soup (Suan La Dofu Tang)

This is a hearty soup that will satisfy non-vegetarians. My guests spooned it over rice and ate it as a sort of casserole. I didn't have thai curry paste, so I used a small spoonful of Indian curry paste.

Green Tea Mint Cookies

Tasty and unique. I tasted more peppermint than green tea, so if you are hesitant because of that ingredient, be not afraid. I didn't have the patience for shaping, so I rolled into balls and then flattened them. These cookies don't brown much, even when they are done, so watch carefully. Not surprisingly, these are a great cookie to have with tea!

Chinese Shrimp and Tofu Soup

Easy and tasty. A great weeknight meal that is healthy and satisfying. I added a handful of sliced mushrooms, which I would do again. I also used precooked shrimp, thawed them out with the oil and garlic ginger mix, then cut them into spoon sized pieces. Use firm tofu...embrace this - it's tasty and much less expensive than meat!

Greek Salad Pizza

Easy, tasty, and healthy. I made this even easier by using pre-made Boboli pizza crust. I spread the crust with the chopped rosemary and the olive oil and heated it in the oven. We even put a little lettuce on top of the finished product. This could be a good appetizer cut into small pieces as well.

Glazed Almond Bundt Cake

This is a great cake for those who don't want gobs of thick traditional frosting. It is moist and full of flavor, but not too sweet. *This is also great as a coffee-cake type of sweet. Great with coffee or tea or for a sweet breakfast treat.* It tasted even better the next day! I took the advice of other reviewers and added 2 teaspoons almond extract and 1/2 teaspoon vanilla extract to the batter.

Holiday Wreath Treats™

Easy, fun, and decorative. We made ours with Special K cereal for a slightly different texture. I suggest buttering your hands, then rolling a handful into a long strip before making the loop. I know buttering your hands sounds gross, but it's really the only way to effectively handle the warm mixture.

Tuscan Soup

Easy to make and tastes great. You can use frozen spinach - it doesn't matter. I simplified by boiling the potatoes in the broth until they were almost done, then added the rest of it for about five more minutes. That makes it a one-pot meal.

Spooky Witches Fingers

Easier than they sound, and really spooky! Roll the fingers thin, because they do plump up when they bake. Be careful when you remove the almond because they are very hot! Nice taste and texture. These were a hit at my Halloween party.

Curry and Coconut Milk Soup

Excellent - it seems too easy to taste this good! Forget chicken noodle - next time I am sick, I am making this one. It will clear out the sinuses and soothe the throat. I used one tablespoon curry paste.
