Apple Avocado Salad with Tangerine Dressing

A bit more work than some salads, but worth the effort. I suggest adding more blue cheese to balance the sweet and savory. The dressing is a bit thin, but fresh and tasty.

Avocado Dessert

Hey everybody, listen to Craig and his mom! This is good stuff! It is easy to make and really very tasty. I served mine chilled, with a dallop of whipped cream and some almond slivers, just to make it a little fancier for my guests. They loved it!

Japanese Fusion Guacamole

A great twist on guac! I served mine with asian rice crackers. I subbed basil and mint leaves for the shiso, per the other reviewers. Great recipe!

Chilled Tomato Soup with Seared Scallops, Avocado, and Ripped Basil

I am giving this three stars because my guests liked it, but I didn't. A lot probably depends on the freshness and quality of the tomatoes used. A good option if you have vegetarians in your company, since the scallops are easy to leave out.

Nut Burgers (Vegetarian)

The taste is good, but I found it very difficult to make the mix into proper patties. I ended up just spooning the mix into the pita - it was great, but not a burger, just a sandwich filling.

No Bake Double Good Dessert

Sweet, Sticky and Spicy Chicken

Full of flavor! I cut down the hot sauce a bit, and might cut back more next time. I agree that it isn't so sticky, but it does taste good. I made mine with crispy fried tofu strips and small pieces of bell pepper. I think beef would work well, too.

Mediterranean Lentil Salad

Fruity Tofu Parfait with Granola

Try this, even if you are new to tofu! I served it at a dinner party, and no one guessed tofu (which supposedly has no taste). Very tasty and very healthy, a nice alternative to yogurt.

Suki's Spinach and Feta Pasta

I kept the sauce and the pasta separate and let my guests spoon each on their plates. I don't recommend letting feta cheese heat at all - it changes the flavor and has a weird smell.

Vegetarian Chickpea Sandwich Filling

A tasty alternative to egg salad or chicken salad - and without the goopey consistency that comes with too much mayo! Hooray. I suggest red onion. I added fresh tomatoes, mushrooms, and cucumber slices to my sandwich. Pocket pitas would make this easier, but any pita is perfect. I used a pastry mixer to mash the chickpeas, which works well. I also left out the dill.

Slow Cooker Vegetable Chili

Where is the liquid? I was sure the vegetables were going to burn in my slow cooker, so I added 2 cups of vegetable broth. I advise anyone to add a minimum of one. I also used two cans of diced tomatoes to make them spoon sized. Very healthy and tasty!

Hot and Sour Tofu Soup (Suan La Dofu Tang)

This is a hearty soup that will satisfy non-vegetarians. My guests spooned it over rice and ate it as a sort of casserole. I didn't have thai curry paste, so I used a small spoonful of Indian curry paste.

Green Tea Mint Cookies

Tasty and unique. I tasted more peppermint than green tea, so if you are hesitant because of that ingredient, be not afraid. I didn't have the patience for shaping, so I rolled into balls and then flattened them. These cookies don't brown much, even when they are done, so watch carefully. Not surprisingly, these are a great cookie to have with tea!
