Basic Sauteed Kale

Cream of Celery Soup

Note: One standard bunch of celery stalks is about 1.5lbs (minus leaves and the base). I used skim milk and half the amount of butter / margarine, and it was still creamy and tasty. I did not strain out the vegetables because they are good for you! Another alternative would be to puree the soup before serving.

Pasta Shells Florentine

Really tasty, and not hard to make. I added about 2T of minced garlic to the stuffing mix. And since the shredded cheese I purchased was in an 8oz bag, I put the rest of the 2oz on top of the dish. Remove the foil for the last 15 minutes of baking.

Caprese Appetizer

For added flavor, rinse the tomatoes and roll in sea salt or other dry spices while they are still wet. The spices will stick to the skin and add that little bit of flavor. When you are finished assembling the skewers, stack in layers facing opposite directions (like a tic tac toe board) and drizzle lightly with balsamic.

Slow Cooker Adobo Chicken

This is a super tasty, low fat & low carb dish! As usual, I found I didn't need to cook as long as the recipe stated. I cooked for two hours on high, then about 1.5 hours on low. The chicken was cooked through, yet tender and juicy. I served with rice and steamed carrots.

Zucchini Herb Casserole

I followed fellow cooks' advice and doubled the spices. This was a tasty and filling recipe. My only complaint is that the cheese was somewhat clumpy due to the high moisture content of the dish. Perhaps I should have cooked it longer? Not sure.

The author is right - it tastes gourmet, but is very easy. I suggest using half the amount of sauce that the recipe calls for. We had quite a bit left.

Chef John's Classic Beef Stroganoff

Excellent! Everything you want Beef Stroganoff to be! I used red wine (the only white I had was very sweet) and used regular sour cream. To speed up cooking a bit, put in less beef broth so you needn't wait so long for the sauce to thicken.

Easy Vegetarian Pasta

A healthy, lighter alternative to pasta dishes with heavy sauces. I suggest adding the tomatoes last so they don't fall apart too much.

A great change of pace and a flexible recipe. I didn't have coconut milk, so I substituted (less) sweetened condensed milk. If you do this, leave out some or all of the maple syrup.
