Texas Caviar I

This can be used as a side dish or a salsa or a topping for fish or chicken. Very versatile! You can use fat free dressing without sacrificing taste in this recipe.

Gingery Carrot Salad

Wow, really tasty! I used white vinegar, regular sugar, and left out the raisins, which shows this recipe is flexible. These are sweet without being sugary.

Lamb Meatballs

Lamb has a different taste than beef, so this was a nice change of pace. Good ratio of meat to bread crumbs, too - thanks for getting that right Kathy. Next time I will make MUCH more sauce. I made two batches this time, and preferred the sauce made with white wine. The only drawback to this recipe is that ground lamb was expensive ($13 /lb), and was a bit hard to find. Had to go to a butcher in town because the grocery store only sold lamb chops.

Candied Cashew and Pear Salad

The salad was good, but the instructions for candying the nuts are not! I ended up with burnt sugar and a melted spoon. Search this site for a better recipe that includes WATER in the instructions. I used strawberries in place of raspberries. The dressing was quite tasty.

Sopapilla Cheesecake

Can't argue with 6 thrilled guests at a dinner party. This was a hit. I used 3/4 C white and 1/4 C brown sugar in the cream cheese mixture. No need to fuss too much about smoothing out the perforations in the dough - they actually made it easier to cut evenly for serving. I would cut the butter and sugar topping in half next time - that is plenty. Also, feel free to make this ahead of time and serve it cold. It was really tasty the day after, too.

Chicken Salad Balsamic

Tasty alternative to mayo-gooey versions. I served mine with tomato slices and cucumbers on whole wheat pocket pita. My friend on a low-carb diet enjoyed it on its own.

Rum-Spiked Horchata

Awesome! Better than any I've had in Mexican restuarants. My food processor broke down, so I grinded the rice as well as I could with a hand mixer (the kind you use to cream butter and sugar for cookies). Good even without the rum.

Yes, cinnamon and tuna can go together! This was unusual but well received by my six dinner guests. I put mine on small whole wheat pita rounds and broiled as other reviewers suggested. Pine nuts are super expensive; if you're on a budget, you can leave them out without sacrificing much.

Ninety Minute Cinnamon Rolls

These are much easier than I thought. They have more of a bready texture than I am used to in cinnamon rolls, which typically are more dense and pastry-like.

These are awesome! I agree with the other reviewers that the salting process is helpful. I served in a round dish with a toothpick in each one to make serving cleaner and easier. Last tip: cut the bacon short-ways before you put it in the pan; this way it is pre-diced before you cook it, and it saves time. Chop again after you've cooked and cooled to get it very fine.

Thanks to the reviewers who suggested only 5 cups of flour. That was plenty. Flour is fine; don't buy cornmeal especially for this. Also thanks to those who suggested scoring the loaves before the second rise.

Beef Bourguignon II

Don't be intimidated! You can make the famous Beef Bourguignon! Follow these directions and it's sure to turn out right. Can someone please suggest a good cut of meat? I just guessed when I got to the store and lucked out. The canned onions are optional, in my opinion.
