Herb Roasted Pork

Delish! This recipe was fantastic and my husband and I had to make ourselves stop eating it. :) I too used the balsamic vinegar, doubled the sauce and found that it cooked in far less than 3 hours. I served it over rice and sauteed some apples on the side. Would be great with pineapple too.

Vietnamese Sandwich

This sandwich was AMAZING and SUPER quick and easy to make. It was ready in 10 minutes! I admit that I did not measure the ingredients, just tossed them on the sandwich (but did add more cilantro later). My husband preferred his with "lots of lime". He gives it two thumbs as well. We will definitely be making this again and again! :)

Chicken and Broccoli Braid

This was AWESOME! I loved it! I will say that I did have difficulty 'braiding' it. The crescent dough started to get too sticky to work with and I was trying to work quickly. So while it didn't look braided (more lumpy), it was really really delicious! I made it for a surprise party and was asked for the recipe.

Pasta e Fagioli II

I made this soup tonight and my husband and I rate it four stars. It was a very filling soup--- perfect for diets! It was a bit too spicey for my husband's taste (I did two shakes of the cayenne pepper, but I liked it with kick. THe only other complaint was that it didn't have enough broth for the amount of pasta--- we were left with more pasta at the end than the broth. I would make it again, but just add more stock.

A-Number-1 Banana Cake

I just made this cake and it is awesome! The only reason I altered the recipe was because I didn't have all the ingredients. I used skim milk with lemon juice as an alternative to buttermilk. Pecans instead of walnuts. I also added a dash of cinnamon. And because I did not have the ingredients for frosting, I took a ghiradelli baking bar and broke it up and tossed it in there with an extra 1/3 of sugar (to make up for the unsweetened chocolate). The little pockets of gooey chocolate was AWESOME! This cake is very light and moist! I would definitely make this again and this time for company!

Slow Cooker Stuffing

This was a really convenient way to free up the stove when doing an elaborate meal such as Thanksgiving. I didn't have 12 ounces of mushrooms so I used 7 ounces of Shitake mushrooms. That gave it a great and unique flavor. I also made my own bread cubes by letting fresh cubed bread sit out overnight and then lightly drying them out in the oven for maybe 10-15 mins. Everyone really liked the stuffing a lot. I think 8 hours was too long though, because at the end the stuffing was beginning to slightly burn on the bottom. I would definitely make this dish again.

Charline's Sweet Potato Casserole

This recipe was AWESOME. I made Thanksgiving this year for people from an assortment of different countries and each one RAVED about this dish. My boyfriend, who hates sweet potato dishes, was already asking me to make this dish again before the day was over! Definitely cut back on the sugar and butter. I probably used about 1-1/4 cup of sugar in the dish itself, 1/2 cup of butter (could go less). In the topping I cut back as well. I let it stand for about 20 mins while I prepped the gravy and turkey. This helped solidify it a bit. This dish is delicious and a wonderful twist on an old favorite!
