Chocolate Dipping Sauce

Awesome dipping sauce, I looked at some of the recent suggestions and based on those and prior cooking projects I used 1/2 c brown sugar and 1 c white sugar I also used 2% no name evap milk and no name cocoa, I eyeballed the vanilla :) Instead of letting the mixture come to a boil for 3 to 5 min I just let it start to boil and then turned it off cooking it enough to slightly thicken and knowing that when it cooled it would thicken a bit more. I also stirred it occasionally with a whisk until it was luke warm before I refrigerated it. It turned out perfect, no skin on top not the consistency of jello just a great dipping sauce that I would imagine goes perefect on just about anything, we used it for pecan pie drizzled on top and on a serve yourself fruit salad. This recipe is a real keeper and will never waste my money again on anything store bought. Thanks for sharing it.

Basic Cream Cheese Frosting

excellent cream cheese frosting, like someone already said I don't know why I have been using that betty crocker stuff this recipe is so easy I used 1/2 the recipe for plenty of icing for a 9x13 cake...thank you

Golden Yam Brownies

Excellent recipe, I read most reviews before baking as they are always helpful. I made the following changes and they turned out great, instead of 1 cup butter I used 3/4 c and a 1/4 c more yams which I mashed. I used 1/2 c Splenda and 1/2c white sugar, 1 1/4 c white flour and 1/4 wheat bran. I also added a 1/4tsp of cinnamon and a little extra vanilla ;), they would be great with raisins and maybe a little more bran to soak up some of the moisture. I also had to bake them an additional 10 minutes on top of the 30 minutes and I didn't bother icing them they were great without the extra calories. Next time I would add a little more bran and start my cooking time at 40 minutes. I baked my own yams and mashed them, they came out perfect from the microwave as others had suggested. Oh I also only put 3 large eggs in instead of 4. Not sure how they would be if I had left the recipe as it was written but everyone that tried them thought they were fabulous the way I made them. Clark's Quiche

This was an excellent tasty recipe that I will make again. I made a few substitutions mostly because I didn't have the items or didn't want to spend the money on them. I left out the Bacon and The Mushrooms. I added an extra 1/2 cup of diced ham and I only put 7 eggs and 1 cup of 1/2 & 1/2 cream in instead of 1 1/2. I also just used tex mex cheese and about 1/2 cup of Asiago that I had left over in the freezer. I used 2 Tenderflake deep dish pie shells and found that it filled right to the top and puffed up in the oven. Also put them on a tray because there was a bit of overflow. My family loved it and I'm sharing some with my co-worker today. I'm sure it will be even better today. Thank you Clark Hamblen...

Grandma Johnson's Scones

Really great recipe, came out just like the picture. I substituted Plain Yogurt for Sour Cream (because I didn't have sour cream) and again squares of margarine for butter. Can't imagine them being any better if I used the right ingriediants they were great and the family loved them too. I added a bit more sugar because I read some reviews that said weren't sweet enough. I also split into 4 and made cheese, blueberry, craisin and chocolate chip. Came out with 4 of each. The blueberry turned out fine because I used fresh and put them in as I was putting the dough out on the pastry sheet to cut. I wouldn't use frozen as it would get pretty messy and the dough is stiff. Thanks Grandma Johnson :)
