Just a quicky post to say that I made the best lasagna I've ever made last night. Another dinner pressed for time and my baby's birthday was yesterday and of course he was requesting lasagna. As if I had all day to brew a sauce, shred mozzerella, boil
noodles, make roasted garlic toast....sheesh, he acts like it's a special day or something.
Aw, poor guy! Of course it's a special day, but I still had to work 10 hours. So, off to the store I went during my lunch break and then met my older son after school to give him groceries to cook when he got home. It really paid off teaching that kid some
When I got home, it didn't take much to finish the sauce off, make the cheese filling, and pop that bad boy in the oven. And we didn't have to eat at midnight....thank goodness (even though the birthday boy fell into a food coma before he could blow out his
candles). I had made some roasted garlic/italian parsley infused butter for Easter, so slapped that on some french bread and popped it in the oven. The birthday boy ate 4 servings and is going to have it for lunch today.
I will post a pic of the
Best Lasagna Ever (which is the name of the recipe) soon. The recipe comes from my go to culinary guru Ree Drummond,
The Pioneer Woman. The total meal cost me $26 at Winco and I bought every ingredient except for the parmesan cheese because I
already had some Parm Reggiano (that's the only ingredient I deviated from since she uses the bottle parm). All the ingredients are very simple but the result is restaurant quality.
I dare you to try it!!
Buon Appetito! y Buen Provecho!!
