Zucchini Cornbread Casserole

Yum! I made very few changes, and it turned out great. I hand-grated my zucchini and did not need to drain it as others suggested. I did use BaconSalt instead of regular salt to give a bit bacon flavor that some suggested- it would have been great with plain salt, too. It did not take a full 60 minutes to bake.

Cheeseburger Noodle Casserole

I made only minor changes to the recipe- fried the hamburger with onions, garlic, salt & pepper; used garlic and onion flavored diced tomatoes; added a little extra light sour cream (almost 12 ounces, instead of 8); elbow macaroni; and added a teaspoon of chili powder. It turned out very well, with a good flavor and texture. Perhaps even a little too creamy, depending on your taste. A unique recipe- I was a little doubtful that the ingredients would go together as well as they did. I'll definitely make it again!

Curried Wild Rice and Squash Soup

This recipe was excellent. It tasted great and was not too complicated to make. My only substitution was that I did not have wild rice, so I used white rice instead. It was fine, but I suspect wild rice would have added even more flavor. As a time saving device, and a "dirty fewer dishes" device, I cooked the rice in one pot, and I simmered everything else in another pot, rather than boiling the squash, draining water, then adding everything else. It turned out really well- I just simmered everything together for about 45 minutes.

Grandma's Eggless, Butterless, Milkless Cake

I have several vegan friends and friends with special dietary needs- it was wonderful to have a cake to make for them that tasted GOOD, not like it was something made together from the ingredients they could eat. Only change- I used 2/3 cup cocoa. Chocolate is good!

Chocolate Lovers' Favorite Cake

I made this cake twice and got rave reviews both times. Only thing- use MINIATURE chocolate chips. The cake I made with the minis turned out much better.

Fresh Apple Cake

This was a very good recipe. As others suggested, I made a few changes: I used only 1 cup of oil and substituted 1/2 cup applesauce in for the missing oil. I didn't put in walnuts, raisins, or nutmeg, because I don't care for them. I baked it in a Bundt cake pan- it only took 1 hour to bake, not 1 1/2 hrs in that pan- so watch your cake while it is baking. I didn't put on any frosting either. Altogether- a wonderful cake. It was not complicated to make, it baked up well, and it tasted good when done.

Stabilized Whipped Cream Icing

This recipe was good- it turned out well for me, I just made sure to follow the times exactly and made sure everything was cold. I was a little disappointed though, that it only tasted like regular whipped cream- I was hoping for something a little sweeter like icing. It still was good though.
