Simple Cauliflower Soup

I was out of butter so used olive oil. Also added one carrot. Did use the immersion blender as I prefer most cream soups this way. I found it a tiny bit bland so in addition to a fair amount of black pepper chopped up about a third of a chipotle (from my freezer stash). YUM with toasted rye bread.

Spinach and Leek White Bean Soup

We really enjoyed this soup. our only addition was one fresh cayenne pepper; cut in half, then removed just before serving. We also used vegetable stock rather than chicken.

Fast and Fabulous Tomato Spinach Canellini Bean and Basil Soup

Excellent soup! I keep diced tomatoes on hand so simply browned onion, garlic, added tomatoes and pureed w/immersion blender. I didn't have fresh spnach on hand so used chopped frozen, used more pepper and cheese but that was it. I added the milk at the end and heated thoroughly.

Ciabatta Bread

Lovely! I baked this as the "virgin run" in my la Cloche; removed top and baked for additional 4 min (no spritzing). We made an olive oil, basil, red pepper 'dip' and had for supper with a few olives and wine. P.S. I halved this recipe first time as I wanted to test la Cloche, and it worked perfectly.

Cranberry Pumpkin Bread

I used 4 (organiic certified humane) eggs rather than substitute, and more nuts tho' I couldn't exactly say how much more. Also, rather than 8x4 pans, I used 4 mini loaves. Baking time was reduced minimally; perhaps 4-5 minutes. Since it's mostly just the two of us at home, this worked perfectly. We loved this bread, and it will become a staple.

The Best Vegetarian Chili in the World

Best Chili in the World as far as I'm concerned. I had already soaked a pound of red kidneys so used them rather than canned mix, but next time will mix 'em up. We've never met a bean we didn't like.

Ethiopian Cabbage Dish

I absolutely LOVE this! It's one of those super-comfort dishes that will become a family staple, I'm sure. Because I had some, I added a few slices (diced) of Morningstar Smart "Bacon". We'll have the leftovers with scrambled eggs.

Lima Bean Pasta

Lovely. I used fresh tarragon as I was looking for recipes that would allow me to use it, plus added half a can of diced tomato and a light sprinkle of crushed red pepper. Also I used farfella pasta just because I like it most. Very satisfying and pretty dish.

Rhubarb Cake I

I have never tasted rhubarb nor cooked with either it or buttermilk. Earlier in the week I had purchased some of the buttermilk & on Wednesday saw a market special on rhubarb. I found this recipe, and made it yesterday. I can only say I am astonished that I didn't stand there and eat the entire thing. It was WONDERFUL! I made it exactly as written ... I didn't chop the rhubarb small enough, but will correct that next time. I will freeze half the cake today in order to refrain from gluttony. Thank you! patricia bannister
