Eileen's Meatloaf

At 9 months pregnant, I was looking for easy recipes to make and freeze. We're naming our daughter Eileen, so this was a no brainer. I followed the recipe but only used ground turkey (I don't eat beef). It is FABULOUS! Anyone that thinks this meatloaf is bland has no taste buds! This will be my go to meatloaf recipe!

Chex® Muddy Buddies® -- Gluten Free!

This is so easy and so delicious! I added a bit more chocolate chips and used some peanut butter chips as well. It is very rich though, which isn't bad, it just means I don't eat it all at once. More for later!

Chicken with Stuffing

WOW! This is sooooo good!!! I didn't do anything to the chicken, I did use 2 cans of soup and used chicken stuffing. I also cooked on high for 2 hours, 15 minutes. It was DELICIOUS and my chicken was nice and moist! Will DEFINITELY make again (and again, and again!).

Oven Fresh Seasoned Potato Wedges

Aunt Millie's Broccoli Casserole

This was really good. I used cheese nip crackers instead of crutons and used cream of celery soup. Made it for Easter and everyone liked it. I'll make it again :)

Crispy Potato Wedges

AWESOME! I cut them up into more fries size and just sprinkled all the seasoning on, didn't measure it. I didn't have canola oil, so I used olive oil. But, the seasonings together and the bake time was perfect! I'll make these again for sure!

Fluffy Peanut Butter Frosting

O.M.G. FABULOUS! I made a layered cake (with chocolate fudge frosting in the middle). It was banana cake and my favorite two things together are banana and peanut butter, so I made this frosting. I can't wait to actually try the whole thing together when I eat it tomorrow after I give it to my friend! It spread perfectly. I kept dipping my knife in warm water. I had no problems with it spreading. I will definitely make this again!

Fast and Easy Tofu Lo-Mein

This was awesome! I'm not the best cook and my husband usually tweaks my final product (which I'm fine with) but he thought this was perfect. I did add some sesame seeds. Otherwise followed the recipe. We will definitely make again!

Microwave Popcorn

I didn't use oil and cut a larger grocery size bag. I stayed at the microwave, and good thing. The bag started to burn. It would have caught on fire if I wasn't there. SO, I think I will buy smaller bags, and obviously put it on for a shorter period of time. About 2 minutes. I did not use oil. The kernels that didn't burn were good though! This will be fun to experiment with as far as flavor goes.

Adam's Dirt Cookies

These were ok. But there is something about them that I'm not sure that I like. I'm thinking the butter. The taste almost greasy. They are good enough to eat and finish, but I don't think I'll make them again. And it's nothing personal Adam. They aren't horrible, it's just not the cookie for me :)

Spinach and Carrot Quiche

this was good. I followed the directs and didn't really change much, maybe just added more carrots. But I felt like it was missing something. It was good and I'll make it again. I like that it makes 2 pies so we can have it later in the week for leftover dinner.

Slow Cooker Chicken and Dumplings

I'm glad I read all the reviews before making this. I added carrots and celery too. I also pulled the chicken out after about 2 hours and cut it up. The chicken was done by then. So, I added the biscuits at that time. A half hour later the crock pot was bubbling and it looked like the lid was about to explode off. So I turned it to low. I added some cornstarch because the liquid was too soupy for me (I also used broth) That made it much better. But it was super bland. So my husband added spices to it. (He's better at spices than I am) This does NOT need to cook on high for 5 hours. I'm so glad I was home to watch it. It was a good but only because I read all the reviews and hubby added good spices. I probably won't make this again. And I would have only given it 2.5 stars if there was a half star option.

Scalloped Corn and Broccoli

I LOVED this! I followed the suggestions and omitted the sugar. It was sweet enough so I'm glad I did. I also added a bit of cheese to the top. It was a big hit! I will definately make again!

Banana Cranberry Bread

This was GREAT! Made it for our Mother's Day get together. I never use shortening and always sub it with sour cream, I also used a whole can of whole cranberry sauce. I also made one loaf with nuts, the other without. Otherwise, I followed the recipe. I will make this again!

Cake Mix Cookies IV

I just made these....sort of. I used a spice cake mix, a whole egg, two egg whites and half a cup of applesauce. Baked for about 8 minutes and they were great! Next time I'll use chunky applesauce with the spice mix! Will totally make again.

Banana Chocolate Chip Dessert

this was outstanding! Whenever my SIL and I get together we always bake banana bread but today I wanted something different! This was it! We both loved it! I cooked it in a 9x13 pan for 30 minutes. Like a muffin in the shape of a bar! DELICIOUS!
