Makeover Fruit Pizza

This was very good and very easy. My 7 year old wanted to make dessert for Easter and she was able to do this with just a little help from me. This is very similar in taste to the fruit tart that Costco makes. Thanks!

Strawberry Oatmeal Breakfast Smoothie

This was easy and great. I put the oatmeal in the blender first to grind it up fine so my kids wouldn't complain about the texture. I also used milk instead of soy.

Banana Sour Cream Bread

Christmas Breakfast Casserole

Quick and easy. I used precooked cubed ham instead of bacon so it took even less time to prepare. It is a pretty basic base recipe, so even the pickest kids will eat it.

Spicy Three Pepper Hummus

I thought this hummus was almost perfect. I followed the recipe exactly but thought the garlic flavor was a little overwhelming and drowned out the other flavors. I would reduce to 4 cloves of garlic so the flavors balance a little better. Mixing the garbonzo beans can be a bit challenging.

Hearty Meatball Sandwich

I just thought this was Ok. The meatballs were missing some seasoning and came out a little too much like a hamburger for my tast. I do like the idea of baking in a log shape to help keep the sandwich together. Also, I put the bread in the oven for a few minutes to toast it prior to loading it up (to keep it from getting soggy). Then I made the sandwich and wrapped it according to the instructions. No soggy bread.

Land of Nod Cinnamon Buns

These were so easy and fantastic. I added 3/4 c. chopped walnuts and put them in pan first. I also used 1/2 c. butter and made a glaze for the top that I added right before serving. The glaze was 1 c. sifted powdered sugar, 1t. vanilla extract, & 1+ T. Milk. I kept adding milk until I reached the right "drizzling" consistency.

Chicken Enchiladas V

It tasted like the enchiladas at our local Mexican restaraunt. I doubled the recipe and froze the extra portion to cook later. Each recipe had 1.5 cans of soup, but it still seemed a little dry. I added 3/4 can of red enchilada sauce and a small can of black olives over the top. Baked for 25 min. then garnished with shredded lettuce and parmeasan cheese. Even my daughter thought it was great.

Banana Muffins II

I did add 1/2 t cinammon and 1/2 t vanilla + 2 T applesauce and a few chocolate chips. These were great. I made them early in the morning and took them to work. My co-workers will usually only eat cookies but they made an exception for these muffins.

Incredibly Cheesy Turkey Meatloaf

This is a recipe with promise. It is a healthier alternative to regular meatloaf. I followed the recipe and found that it needs a little more seasoning to give it some zip. I used mini loaf pans and it still took over an hour to cook. Next time I plan to add onion, garlic salt, and some more bread crumbs to keep the meatloaf from being so difficult to handle when raw. The recipe quantity is big enough to feed a family of four twice. Freeze the extra pound of meatloaf mix for an easy dinner later.

Peanut Butter and Banana French Toast

These are very rich and very good. My 1 year old loves to eat them plain like a sandwich. At least I know that she is getting fruit, protein, bread, and dairy in her diet with this meal.

Bob's Awesome Lasagna

This is a great simple lasagna recipe. It tasted even better the next day. After reading other reviews, I added one 14.5 oz can of diced peeled tomatoes (drained), about 6 oz. of tomato sauce, and a teaspoon of Italian seasoning. I also used no boil noodles and baked it covered with foil for the first 45 minutes. I think next time I will try it with 1/2 ground beef and 1/2 Italian sausage for a stronger flavor.

Spicy Pretzels

This is an easy way to spruce up your pretzels. My husband loved it. I followed some other suggestions and replaced garlic salt with garlic powder. I also baked them for 15 minutes at 250 so they wouldn't be oily.

Pot Roast in Foil
