Slow Cooker Chicken Tetrazzini

I scaled the recipe down to half, and followed directions exactly. The only thing I did different was add mushrooms, and served over spinach spaghetti. This dish was good, definitely creamy, and the chicken was tender and delicious... but something seems off. It just doesn't taste like tetrazzini to me.

Pork Chops and Cheesy Scalloped Potatoes

I only have a 2 quart crockpot, so I had to scale this down, but for the most part I stuck to the recipe. Here is what I did. -I used 1 pork chop- it was probably around 2" thick, so I halved it and cut it into pieces (and that's all I could fit in the bottom layer. -I could only fit 2.5 layers of potato & onion in. I used 3 'B size' red potatoes, and 1 onion (~2" diameter). Potatoes & onions were sliced about 1/4" thick. -1 used only half the jar of cheese sauce, and thinned it with milk & water -cooked in the crockpot on high for 5 hours, probably could have gone less. Overall this turned out pretty good. The pork chop was tender and falling apart. The sauce wasn't too runny or thick, and everything had good mild cheese flavor. I couldn't taste the onions though. I will make this again, but I might need to add something to it (garlic? tabasco?), as I prefer bold, spicy flavors.

Spaghetti Sauce

Very Easy and Versatile! I doubled the recipe (will freeze half), didn't use any green onions, and added a small diced zucchini. I hate jarred sauce (it's got this weird sweet tangy flavor) so I was looking for something to put in various pasta dishes, perhaps as a pizza sauce. This turned out just right- not too sweet, not too salty.

Kim's Ultimate Meatloaf

This was an easy recipe (especially for a culinary-challenged college student like myself) and turned out delicious! My roommates and I made just the meatloaf part (not the sauce), with the addition of some garlic, and the meatloaf was better than anything we had eaten in a while. I would be careful, as the meatloaf was 'soggy' or very moist, but we cooked it a little longer at a lower temperature and everything was ok.
