Strawberry Avocado Salad

A great summer salad that is very refreshing. The dressing is delicious (sweet and tangy) We added some wasabi powder to it which seemed to enhance the tangyness.

Coconut Curried Tofu with Green Beans and Coconut Rice

A fantastic aroma fills the house during cooking and the taste lives up to the reviews. I added a sweet potato and baby corn for some extra color and nutrients.

Vegan Chocolate Cake

Loved it! Very similar to the cake I order at our local vegetarian restaurant. I used a 9" round silicone cake pan and cooked for 30 min. @ 350. It was very moist and I didn't have any problems with it sticking to the pan as other reviewers have noted.

Simple Tuna Melts

Simply delicious. Instead of English muffin, I used the English muffin bread. Grilled to perfection, golden brown and crunchy on the outside and creamy and chessy on the inside. Also added fresh dill, some lemon zest and a teaspoon of lemon juice. A great accompaniment with soups.

Trinidad Stewed Chicken

All the ingredients incorporated really well together making this a very flavorful dish. I made a couple of changes; omitted the garlic, replaced the cilantro with parsley and added some lime zest and lime juice to the chicken marinate. The lime juice adds some tanginess to the dish. We served it with coconut rice which is a very nice compliment. We loved it and will definitely make this again.

Rosemary Turkey Meatloaf

After reading several reviews that the loaf turned out mushy, I molded the meat in the loaf pan and inverted it out onto a wire-rack to form its shape. I placed the wire-rack on top of a foil-lined cookie sheet. This works great. It prevented the meatloaf from being soggy and it also allows the sauce to cover all the sides. As for the sauce, I replaced the brown sugar with honey. It is a good compliment to the dijon mustard and it helped thicken the sauce. Will definitely make this again, its very tasty.

Japanese Okonomiyaki

This can be a very versatile recipe. Not to mention very delicious as well. As the name suggests, okonomi means your favorite in Japanese. So you can add any of your favorite ingredients in okonomi-yaki. We made ours with shrimp, crab meat and shiitaki mushroom. Instead of water, we used dashi stock which adds more flavor.

All-Star Veggie Burger

This All-Star Veggie Burger gets 5-stars! I am pleasantly surprised at how flavorful it turned out to be. Used all the ingredients listed except for the dried sage which is replaced with thyme. We froze the remaining patties and it works well.

Baked Apple-Pecan Maple Pancakes

Made this for dinner tonight and it was excellent! Easy and quick. I followed a tip from one of the reviewers to mix the cinnamon and maple to the apples which works really well. I mix the cinnamon and 2 tablespoons of maple syrup to the apples and then arrange them to the bottom of the pan. Used only 1 tablespoon of butter which is sufficient. Drizzled the final tablespoon of maple syrup after arranging the apples and sprinkle some all spice as well. Finally poured the pancake batter over the apples. Baked for 25 minutes and let it sit for another 5. It turned out perfect. Will definitely make this again and will try with other fruits.
