Unstuffed Cabbage

I really liked this dish but I would suggest a few changes: first, go scant on the brown sugar; second, add cumin! (about 3/4 tsp); third, only add 1 can Italian stewed tomatoes but also add 1 small fresh tomato (seeded & diced) with several sprinkles of Italian seasoning. Otherwise I followed the directions, served it over instant brown rice made with veggie broth, and topped with a dollop of fat free sour cream. My husband wouldn't eat it because he is for some reason adverse to slightly sweet entree dishes. I did not mind though because I got the leftovers!

Lentils And Spinach

This is a great recipe if you double the lentils. I love to make a batch to have for lunches for a few days. I have it with whole wheat muffins and a sliced carrot. Yummy and nutritious!

Linda's Lasagna

I have tried several different lasagnas now and this is mine & my husband's favorite so far. I added 1 (10-oz) package frozen spinach with the parmesan & egg, only used 4 oz cottage cheese, and used 1 cup shredded mozzarella and 1 cup shredded cheddar in place of the 1 lb mozzarella. The sauce had a wonderful flavor and I would use it again for pasta (but the Slow Cooker Spinach Marinara from this site is my favorite). My husband commented that it was a little too saucy and could've used the addition of mushrooms and more cheese.

Daria's Slow Cooker Beef Stroganoff

This was a pretty good recipe but I think I will stick to the stove-top version next time. I used sirloin steak and wish it hadn't falled apart so much- it turned too beef stew-y for me. I also omitted the chives and white whine and used fat free sour cream. I served it over buttered penne noodles. I did like this enough to have it for leftovers the next day but not a third.

Blueberry Cream Muffins

These were good muffins even though I made the following substitutions: Egg Beaters for the eggs, granular Splenda for the sugar, applesauce for the vegetable oil, a mixture of whole wheat and soy flour for the all-purpose, and I used fat free sour cream.

Slow Cooker Spinach Marinara Sauce

This was a great sauce that I will definitely be making again. I reduced the salt, oregano, and basil to 1 tbsp; the red pepper to 1/2 tbsp; and the tomato paste to 1 (12-oz) can. It was very thick in my slow cooker and I had to add a little water. I used this in place of the tomato sauce in the Tofu Parmigiana recipe on this website and also served it over penne pasta on the side. My husband and I were disappointed when we ran out of leftovers the next day.

Whole Wheat Snickerdoodles I

These were yummy little cookies. I made the following substitutions: used light butter, Splenda's brown sugar blend, egg beaters, 2 parts whole wheat flour to 1 part soy flour (my husband is diabetic so I was trying to reduce the carbs), and granular Splenda. They were delicious and the perfect texture!

Cheesy Spinach Lasagna

This wasn't a terrible recipe, but my fiance and I didn't care too much for it, and will not make it again. I think it was too bacon-y for my taste and he said we should stick to tomato-based lasagnas.

Sloppy Joes II

I'm not really a sloppy joe fan, but I thought this tasted great. I did, however, make the following substitutions: instead of 3 tsp brown sugar, I used 2 tsp Splenda Brown Sugar Blend and 1 tsp granular Splenda, also I used spicy brown mustard. The only complaint was that my fiance thought they weren't quite "sloppy" enough, but I kind of liked mine better that way.

Alfredo Light

This was a decent sauce but it took forever to thicken. I substituted the broccoli for chopped fresh mushrooms and used 2% milk in place of the skim. I also served it over spaghetti instead of fettuccine.

Cheese Filled Triangles

These appetizers went over great at a church function, but I could not get them to look like triangles (that's the only reason that I'm giving a 4 instead of a 5). The taste was great and I sprayed the phyllo dough with butter-flavored cooking spray instead of brushing with the butter to cut down on calories. I would make these again!

Mediterranean Fish Fillet Casserole

This recipe was surprisingly good. I did make the following changes however: used frozen catfish fillets instead of the Gordon's ones, omitted the tomatoes & olives, added chopped mushrooms. I used this recipe as a way to get rid of some leftover groceries & my fiance went back for seconds!

Awesome Egg Rolls

These egg rolls had a delicious taste (my fiance agreed)! I omitted the celery (forgot to get it at the store) and instead of deep frying them in egg roll wrappers, I baked them in some extra phyllo dough that I had left over. Would definitely make these again!

Teriyaki Chicken

This sauce was excellent though I didn't exactly use it like the recipe said. I made the following substitutions: granular Splenda for the sugar and dry ginger (1/2 the measurement) for the fresh. We served this over grilled tilapia and brown rice. My fiance gave it a 10/10 and was amazed at how it tied the meal together. I will definitely be making this again!

Broccoli Cheese Soup

This was a very tasty recipe, though for some reason it was lumpy. I probably either didn't melt the cheese thoroughly or didn't dissolve the cornstarch enough. Either way, I will be making this again.

Oatmeal Whole Wheat Quick Bread

I originally chose this recipe because it was full of healthy stuff, but I will continue making it because it is absolutely delicious! I made the following substitutions to make it a little healthier: 2 tbsp sugar-free maple syrup for the 1.2 tbsp honey and 1 tbsp natural applesauce for the 1 tbsp vegetable oil. I also made these additions for flavor: 3/4 cup raisins, 1/2 tsp cinnamon, and 1/2 tsp imitation vanilla. Also, I did not grind the oatmeal and found that I would prefer it this way. I used 1/2 cup skim milk + 1/2 cup 2% milk and would recommend this as well. I love to eat this for breakfast in the morning spread with a little butter.

Chicken and Dumplings III

This recipe was an absolute hit! My fiance has grown up on his mother's homemade Southern Chicken & Dumplings but he loved this recipe. They only change I made was that I baked the chicken and shredded it before saute-ing it with the onions, and I also omitted the celery and celery seed (didn't miss it at all). I have never had Chicken & Dumplings before (much less made them) and I was thoroughly impressed. We will be making this again often I'm sure.

Good Old Fashioned Pancakes

These were excellent pancakes; however I made the following substitutions to make them a little healthier and tastier: 2 parts whole wheat flour to 1 part all-purpose flour, used light margarine, Splenda instead of sugar, and also added 1/2 tsp vanilla and a couple dashes of cinnamon. Will definitely be making these again!
