Baked Dijon Salmon

My kids and I love fish, my husband is not a fan. So for him to enjoy this, is high praise indeed. I'm not sure why some have had problems with it being soggy. We found it to be moist and flaky. Also, the nuts add just a hint of flavor, and are really good (and I am not usually a nut fan). This is my favorite way to cook salmon now, and my husband says it's the first recipe that doesn't 'taste' fishy to him!

Ginger Glazed Mahi Mahi

My family LOVED this! It's very hard for my to get my husband to eat fish (he only eats it if it doesn't taste fishy, ugh) and he said we could add this to our permanent menu, lol. My kids enjoyed this too, although my 4 year old like it better without the sauce. Wonderful blend of flavors, and we didn't think any one ingredient stood out over another. I served this with the orange asparagus from this site, wich I have reviewed as well, and they complimented each other well.

Orange-Glazed Asparagus

I should have followed the advice to add the Arrowroot powder to thicken the sauce. The flavor was good, but I would have prefered a 'sauce' rather than juice in the bottom of the bowl. That aside, it passed the kid test, so we'll definately be eating it again.

Old Fashioned Onion Rings

These are the BEST I've ever tasted! Per another reviewer, I made the dipping sauce from the Blooming Onion recipe to go with these, and it was incredible! Note - I double the recipe, since I have a large family, and it was almost too much. I used large, sweet vidalia onions. Next time I will not double the recipe.

Blooming Onion and Dipping Sauce

DELICOUS! I didn't use the blooming onion step, just the dipping sauce for another onion ring recipe on this site, and it was divine! Now my children, who are all under 8, weren't huge fans of the dipping sauce, but my DH and I loved this!

Hot Spiced Cranberry Cider

Apple Cider Sauce and Pork Loin Chops

My husband loved this! I did make a few small changes. I didn't have poultry seasoning, so I used seasoning salt. Also, I did not have cider concentrate, so I also used regular cider. It seemed to work fine for me. Last, I thought I had sherry in my pantry, and surprise, DH used the last of it a week ago. So I substituted white wine vinegar, and we really enjoyed the flavor. I noted that previous reviews said the sauce did not thicken, so I added about 1tsp. of cornstarch, and it mixed it well. Thickened nicely. I served this with rice pilaf, and it really complimented the gravy.

My family LOVES this!! Best of all,you can freez these for a quick snack later on. I do tripple the recipe for dinner, but I feed a family of 6. But we just love these!!!

Filipino Ribs

WOW!!! Every last member of my family came back for seconds on this wonderful dish!! My kids are not big meat eaters (not for lack of trying on my part) and they gobbled these down like candy. I double the glaze as recommended on a previous review, but other than that, I followed the directions to the letter. I can't wait to serve these for family and friends, they were an instant favorite for my family.

Easy Raspberry Chicken with Coconut Rice

My husband and I thought this was excellent, kids weren't overly thrilled with it. That being said, I will be making this again. Two reviewers mentioned the rice was mushy. I made mine in a rice cooker and had no problems. On the stove, you have to make sure all the liquid boils down and be sure to not stir it. If you stir rice while it's cooking, it gets very sticky. The flavor on the rice is very mild, but it's ment to compliment the chicken. If you want a more flavorful side dish, definately skip this rice. I thought it was great though. HTH.

Crispy Orange Beef

I added only 1 TBS of ginger, and this was delicous! My husband enjoyed it too. As other's have noted, cutting back on the ginger keeps it from overpowering the meat. I can't wait to make this again!

Bahamian Mahi Mahi

I loved it, DH said it was OK (but he's not a fish eater by choice) The flavor is simple, but it goes great with rice pilaf. We grilled ours on the bbq and basted the marinade as we cooked (we have a cage thing for the bbq) I'm looking forward to this again this summer.

Kangaroo Chops

I'm giving this four stars instead of 5 only because the potatoes did take longer to cook than suggested. Next time I make these, I will par boil them first, and that will make all the difference in the world. That being said, my family really enjoyed this! My kids loved the name, and were instantly willing to try it (no small feet in my house) Only my 2 yr old picked at it a bit, but he did eat most of it. I will definately make these again, and the flavor was really good.

Polynesian Chicken

My family loved this! I doubled the recipe, as I had family from out of town visiting, and I found the broth cooked down too far at first. So I added more ginger ale, then some chicken broth, then I thickend it with the corn starch. I served this over brown jasmine rice I found at Trader Joe's, and I did substitute splenda for the sugar to make it a little healthier. Finally, I realized I was out of fresh ginger, so I ended up substituting 2 tsp. of ground ginger, and it was perfect.

Cinnamon Rolls II

These were delicous!! Everyone in the family gobbled them up, so I have no idea if they freeze well or not (as the author advised) My only word of caution, is that this is a lot of dough. I have a 1 1/2 lb. bread machine, and it wasn't able to mix all the ingredients, so I had to get a rubber spatula and help. But everything rose just fine, and they turned out wonderful, so I'll just cut the recipe in half next time so it will fit in my bread machine better. And the icing for these is the best I've had!

Chewy Chocolate Chip Oatmeal Cookies

These are GREAT! Moist and chewy, exactly what an oatmeal chocolate chip cookie should be. I used Hershey special dark chips, and they complemented this dough perfectly!
