About this Cook
I'm a busy mom to four little yahoo's. I love to cook, and enjoy trying new recipes with my family.
My favorite things to cook
desserts! I'm always asked to bring a dessert to gatherings. I seem to be able to spot a good one in a cookbook, lol
My favorite family cooking traditions
during the holidays, my grandmother, cousins, aunts, anyone female relate, lol, will get together and prepare for whatever feast we were serving. I learned so many things from different people, and it was fun too.
My cooking triumphs
I threw a baby shower tea for a friend last year. I got my timing just perfect, and my hot horderves came out right as the guests arrived, and the food flowed really well with the event. I did a tripple berry trifle (first try at this!) that everyone thought I had made at a local bakery, and everyone was amazed that I had made all the food (and I've had people since ask me to parties for them, lol)
My cooking tragedies
my first year in college, I decided to have some of the other students over who were also unable to go home for the holidays. I've watched my mom do the turkey for years, and I was confident I could pull it off. Yeah, we ended up all chipping in for Boston Market, lol. It still gives me a good chuckle every holiday season

Chicken Marsala Florentine
This was amazing! I used boneless chicken breasts, which made it was a little on the oily side, so next time I'll reduce the olive oil, but that's the only change I would make. The flavor is fantastic!!

Maple Salmon
I read the reviews and decided to omit the garlic salt in favor of two more fresh cloves of garlic. I would have loved to have added fresh ginger, but I didn't have any on hand, so I added some ground ginger as well as some chipotle powder for some extra kick - about an 1/8 tsp. I baked it foil for about 10 min, then uncovered it for the last 5 min. I used a bag of salmon fillets and served this with green tea jasmine rice and green beans. Absolutely delicious!!

Chipotle Crusted Pork Tenderloin
we used this rub on some ribs we smoked tonight. Fabulous!!! I did cut back on the chipotle seasoning to just 1 TBS and doubled everything else. There was a good balance of heat and sweet with the brown sugar. My new favorite rub!!
