Spinach Basil Pesto
I just made this last night, and it was delicious! Even with the 2:1 spinach:basil ratio, there was a nice basil taste-- the spinach did not overpower the flavor. I used fresh regular spinach leaves. Like other reviewers, I was just a bit short on pine nuts so threw in a handful of slivered almonds. I did not have grated parmesan on hand, so used a shaved four cheese combination (asiago, parmesan, romano..). Four cloves of garlic was perfect for my taste. I used this is a topping for paninis and froze the rest. Yum!
