Tofu Pumpkin Pie

Very, very good! I made this for the first time this year for Thanksgiving (made the day before). It was very creamy, & no one knew it was made with tofu! (except for my mother - I made the recipe for her) No one else questioned that it tasted "different". However, the reason I gave it 4 stars & not 5 is because 1) both my mother & I thought it needed more of a real "pumpkin" flavor and 2)everyone noticed that the clove taste was a little strong. I think the next time I make it I'll use pumpkin pie spice instead and maybe a little extra pumpkin as well. Otherwise, I would absolutely recommend it to serve to anyone who can't have dairy. I'll be making it again.

Broiled Scallops

I thought this recipie was very good, but my boyfriend loved it! I took someone else's suggestion on here & used old bay seasoning instead of the garlic salt. The only problem I had was that the entire apt. ended up smelling of "old bay" until the next morning. I'll definetly be making this again - but with the windows open :)

Coffee Marinated Steak

I was VERY afraid to make this recipie - simply bec. of the coffee, but I'm soooo glad I took the chance! It truly was wonderful. I had a really tough piece of meat which I cut in half & made one half with this marinade & the other with a different marinade recipie. This one was the best. I ended up marinating it for abt. 24 hours, so I don't know if that had anything to do with it, but compared to the other piece, this was sooo much more tender & juicy. I did things slightly different - I omitted the seeds & the worchester sauce (didn't have any). Also, I didn't know how "strong" strong coffee was supposed to be, so I used left-over Jamaican Blue Mtn. coffee (about a cup).I also didn't measure anything - just "eyeballed it" & it still came out fantastic!(whew!) A great recipie - thanks for sharing!
