Ruby Drive Sloppy Joes

These were pretty good! Sweet and tangy. I used mild salsa, and I did take the advice of other reviewers and reduced the ketchup to one cup and halved the amount of vinegar. Also left out the hot sauce as I can't eat anything really spicy. Other than that, I left everything the same. Will definitely be making again. So much better than manwich (which I do like).

Hobo Dinner

The thing I liked most about this was the potatoes, and that was only because I added in some beef broth to the dish before cooking. The rest of it I found very bland, even with adding onion salt, garlic salt, and Worcestershire sauce to the ground beef. The roomie and I agreed, baking them in patties was a horrible idea. Next time I'll try browning the meat in a skillet first and crumbling it into the dish. I'll also experiment with some spices, because this just lacked flavour all over. We couldn't even bring ourselves to finish the leftovers.

Hearty Mince

This was pretty good, with a few modifications. Like several other reviewers, I used a can of diced tomatoes with the juice instead of plain tomato juice, ditched the water for a bit extra beef stock, and didn't use sherry. I added a bit of garlic salt to the meat and onions while they were cooking (and also ditched the margarine, the grease was enough for the onions to cook in), and also made sure to drain the excess fat so it wouldn't get greasy later. I also left out the celery salt and pepper and instead added in some oregano, dill weed, and basil to the sauce mix, along with a bit extra worcestershire sauce. Like others, I initially had sauce that was still too watery after the sour cream was added, so I turned up the heat to boil some of the excess away (be sure to stir often if you try this, it will attempt to stick), and then turned it back down to low heat and let it thicken while I made a salad and some garlic rolls. By the time I was done with those (about 7-8 minutes) it had thickened nicely, with no excess watery sauce. I will most likely make this again.

Rosemary Ranch Chicken Kabobs

The roomie and I agreed; this turned out amazing. He requested I make it again and again. Though, as I don't have a grill, I marinated some chicken breast tenderloins in the sauce overnight and then cooked them in a grilling skillet on the stovetop until they were a delicious golden brown. Then I took the leftover marinade and chopped up some vidalia onions to cook up in it until they were nice and soft. They came out great, the roomie even requested seconds on the onions and normally he's not a big fan of them. Will definitely add this to my list of meals to make regularly!

No Sour Cream Beef Stroganoff

I wanted to try this because I can't have sour cream but love beef stroganoff. I don't keep white wine on hand so I used half a cup of beef broth instead. I also used a whole can of beef broth to add in instead of the half can called for, and garlic salt rather than garlic cloves. Once everything was cooked and mixed together I wasn't so sure about it. It looked too much like hamburger helper, and while I have nothing against HH, if I'm cooking it's because I want something other than HH for once :P It also lacked in colour so I added a big handful of dried parsley flakes. However, it did taste better than expected, mostly due to the Worcestershire sauce. I added in a very liberal "dash", stirred it in and let it cook for a few minutes, then added in an equally liberal second dash. It was decent, I will at least eat the leftovers. However, if I make it again I'll probably use beef strips and fresh mushrooms, and maybe experiment with a few additional seasonings.

Penne with Chicken and Pesto

Pretty good! I liked this, and didn't really change much other than using garlic salt instead and leaving out the Parmesan. I used a pack of knorr pesto sauce and had no problems with too much pasta for the sauce. My lactose-intolerance seems to be protesting the heavy cream though, so I may try reducing it and subbing in some chicken broth next time. This is a great recipe for adding that little extra for improving on plain old pesto.

Taco Casserole

It wasn't as good as I initially thought it would be, but better than I expected after it was made. Of course, I made some modifications, so that could be my own fault! I used shredded chicken instead of beef, then cooked the taco seasoning into the chicken as directed on the package. I also used about a cup of salsa instead of tomato soup--next time I'll probably use the whole jar. I also left off the chips and just heated them for a few minutes in the oven afterwards to crumble onto individual servings. It was still pretty good, just a bit dry. The roomie liked it better than I, although he also dumped some cheese sauce into his.

Jiffy Casserole

Fantastic recipe! Made it last night and the roomie and I both loved it. I did, however, use two cans of soup mixed with milk rather than water as suggested by several other reviews, and also added a bit of garlic salt as well. I will also boil the potatoes a bit first next time, as they cooked for an hour and a half before they were done. Other than that, this was super delicious and I will definitely make this again and again!
