Blackberry Cobbler

Very good flavor, especially while still warm. Biscuit portions get hard when cold. Jelly roll procedure a little difficult to manage, but do-able especially if slices are 1" wide. 1/4" wide slices will never work. Pouring sugar water into pan looks strange, but cobbler turns out great. 2nd time, I made recipe using fresh strawberries and added about 1/4 c. sugar to dough. This was very good.

Strawberry Coffee Cake

Good flavor, but texture is definitely more like a cobbler than coffee cake. I followed the directions exactly and cake was still gooey in center after 35 minutes. I keep a thermometer inside the oven, so I know the temp was correct. Cooked another 10 minutes, so not as gooey, but cake is too soft to cut into squares for serving. OK to serve and eat with a spoon. Taste was good; not overly sweet even with sugar topping.

White Chocolate and Cranberry Cookies

Pumpkin Gingerbread

The first time I made this exactly by the recipe and it was very good, but I felt it needed more spice. The second time, I used 1/2 c. vegetable oil and 1/2 unsweetened applesauce plus used 2 tablespoons of ginger instead of 2 teaspoons and 2 teaspoons of cinnamon instead of 1. I baked it as a cake in a tube pan (45 minutes) and topped the cake with a simple frosting made of butter, confectioner's sugar, and lemon juice (put it on the top and let it drizzle down the sides). I grated candied ginger and sprinkled that over the frosting. It made a delicious, professional-looking cake that got rave reviews from my guests! This is perfect for the holidays -- sweet, but not too sweet.

Apple Crisp II

I made this recipe exactly as written the first time and it was great. The next time, I increased the cinnamon a bit and added a sprinkling of ground ginger and ground cloves. It is out of this world delicious. Thanks for the recipe!

Sugar Pie I

Delicious pie! I followed the recipe exactly. We love lemons and this is the perfect blend of sweet and tart. "3 lemons" is 1/2 cup of juice--you'll get a bit more if you microwave the lemons for about 15 seconds before squeezing. If you squeeze them too hard or press to extract the juice, you might get some bitterness from the pith. A hand-held wooden reamer is best, IMHO. I served it after it had cooled (just room temp) and topped with a dollop of Cool Whip and a strawberry. YUM!

Blueberry Oat Muffins

Oriental Asparagus Salad

Delicious! I followed the recipe exactly and it is wonderful. We love asparagus, but were getting tired of steamed or grilled. This salad is perfect. Very quick to prepare and it's yummy!!

Million Dollar Cake

Delicious! I sent this to work with DH and it got rave reviews. I followed some other suggestions and drained the pineapple. I used the juice in place of the water in the cake mix. The frosting seemed a little thin at first, but it thickened well after a few minutes in the frig.

Cream Filled Cupcakes

I would like this better if the cake was more chocolate-y. The filling was delish. I've never filled cupcakes before, but these were easy. I inserted the tube at the top and the hole was covered by chocolate frosting. Thanks!

Shrimp Lemon Pepper Linguini

This is FABULOUS!! My husband is lactose intolerant and so many non-red sauce pasta recipes have cream, milk, or cheese. This is perfect. I followed the recipe exactly and it was delicious. DH says I can make this once a week!

Southern Praline Pecan Cake

This is a very easy and quick recipe that makes a yummy cake. I made mini-cakes using the Nordicware Mini Bundt pan. I used pecan meal instead of chopped pecans in the bottoms. They were done after baking about 17 minutes. After cooling, I topped each with a small dollop of cream cheese frosting and then drizzled each with thin caramel frosting. They made a spectacular presentation!

Georgia's Tennessee Jam Cake

Fabulous cake! I followed the recipe exactly and it was perfect. I frosted it with Caramel Frosting, but think the Cream Cheese Frosting would be yummy too! Maybe next time I'll try caramel between the layers and Cream Cheese outside the cake -- the best of both worlds!

Italian Bread Using a Bread Machine

I made this recipe twice yesterday and neither one turned out as I had hoped. The first time was my fault. Ingredients should always be listed in the order used and most bread machines call for liquids to be added first. I forgot this and ended up putting the water on top. That doesn't work, but it was my fault for forgetting. The second time, the dough seemed OK and rose in the bread machine, but was entirely too sticky to handle when removed and it didn't rise properly the second time. The crust was what I had hoped for and the taste was OK, but the loaves weren't very big.

Aunt Dee Dee's Apple Coffee Cake

I made the recipe exactly as written the first time and it was very good. I needed a quick, but homemade, dish for DH's snack day at work. I didn't have apple pie filling, so substituted raspberry pie filling and omitted the cinnamon -- DELISH!! Raspberry pie filling is sometimes hard to find, but I'll be stocking up when I find it. It was better than the apple! Very moist and tasty!

Apple Pumpkin Muffins

These are delicious. The muffins are tender and flavorful. I only had to bake them for 25 minutes and they were done. I used Granny Smith apples and, since they were fairly tart, I tossed them in about 3 tablespoons of brown sugar before folding into the muffin batter. I will definitely be making these again!
