Scones

Reviewed: Jan. 24, 2015
Oh my! These are light as a feather! I followed the recipe exactly except used heavy cream instead of milk because it was what I had on hand. I'm not sure how fruit, especially dried, would work in these because they are so light. I served them with apricot preserves and there were none left.

Chewy Peanut Butter Chocolate Chip Cookies

Reviewed: Nov. 23, 2014
These are great cookies! I followed the recipe exactly and they turned out wonderful. I didn't use a 1/4 cup measure for dipping up the cookies; used a tablespoon and my cookies were slightly smaller than the recipe. I got 4 1/2 dozen cookies. They smelled like peanut butter cookies while baking and tasted like peanut butter cookies when eaten. I use quality peanut butter, though--not store brand. My first pan baked a little long so were a little more crispy than chewy, but the rest were nice and chewy. Keep an eye on the clock after the pan is out of the oven and be sure to take up the cookies or they will become welded to the baking sheet. Thanks for a delicious recipe!

Heather's Cilantro, Black Bean, and Corn Salsa

Reviewed: Nov. 8, 2014
I made this twice this summer while we had plenty of fresh corn. It is delicious! The second time, I doubled the recipe and it still disappeared quickly. It is a really nice change from regular red salsa. YUMMY!!

Italian Sausage Soup with Tortellini

Reviewed: Nov. 8, 2014
OMG, if I could give this 10 stars, I would! This soup is delicious!! We don't care for zucchini so I sub'd spinach and I was out of oregano, so left that out. Otherwise, I followed the recipe exactly. It is wonderful!!

Peach Cobbler Muffins

Reviewed: Jul. 20, 2014
These are very good. I used a pan that makes large muffins and they were a little dry. I used a pan for regular sized muffins the next time and they were perfect. Either I cooked the first batch a little too long or the recipe isn't suitable for large muffins. I'll definitely make these again!

I followed the recipe exactly and this bread is delicious! It is moist without being too wet. The sweetness is just right. I will definitely be making this again and again!

Oatmeal Strawberry Bread

Reviewed: May 31, 2014
I followed the recipe exactly and my bread was not only dry, the top falls off when you invert the bread to take it out of the pan.

Banana Crumb Muffins

Reviewed: Feb. 5, 2014
DELISH! I followed the recipe exactly and these are wonderful. I've used other recipes that call for oil and I think butter adds a richer flavor to these muffins. The crumb topping is really good--I'm going to add a little (uncooked) oatmeal the next time I make them for a bit of extra crunch. I like large, bakery-style muffins and will use my larger muffin pan next time. These rise beautifully for a nicely domed muffin. Can't wait for my bananas to get over-ripe so I can make these again!!

Garlic Chive Chicken

Reviewed: Jun. 1, 2013
This dish is incredible! The only two things I did differently were to cut the boneless chicken into 1-2" cubes so they would cook faster and served it over rigatoni instead of noodles -- we like pasta better than egg noodles. I will definitely be making this again! YUM!!

Strawberry Muffins

Reviewed: Jun. 1, 2013
I followed the recipe exactly and these are delicious. I used fresh picked strawberries which have a much better flavor that grocery store strawberries. I mixed all the dry ingredients together then all the wet ingredients together, with the strawberries in the wet ingredients. Add the wet to the dry and stir with a spoon just until the batter is mixed and no dry flour remains. Not over mixing is the secret to good muffins.

Banana Muffins II

Reviewed: Mar. 6, 2013
Followed the recipe exactly and these are perfect banana muffins! They are very light -- not dense at all, like some banana breads can be. I'm going to make them again and add some crushed pineapple and coconut. I think that would make a wonderful "tropical" muffin. Mine baked in 20 minutes, but my oven tends to cook hot. Thanks for a great recipe -- now I won't mind so much when DH buys too many bananas at the store!

Bread Machine Rolls

Reviewed: Feb. 11, 2013
Followed the recipe exactly for making the dough. To shape the rolls, I divided the dough into 12 balls and then split each ball and rolled the 2 halves into balls. I put the balls into the cups of a greased muffin pan, 2 balls in each section. I let them rise about 50 minutes. I didn't use a damp cloth to cover them for fear of sticking. I covered the rolls with greased waxed paper and still had one stick a little, but it didn't deflate. Followed the baking directions in the recipe. The end result was delicious, professional looking dinner rolls. I'll definitely be making these again soon!

Cranberry Muffins

Reviewed: Nov. 9, 2012
Delicious! Just sweet enough -- very tasty. Only made one change, because I didn't have orange juice, and substituted cranberry juice. I was afraid the muffins would be pink, but they weren't. Really yummy. Will definitely be making these again, especially since DH is lactose intolerant, so these are perfect for him!

Easy Peach Crisp II

Reviewed: Jul. 21, 2012
YUMMY! I followed the recipe exactly except for using fresh peaches. I thought there would be too much "crisp" when I was putting it in the pan, but it baked down and is perfect. I'll be making this again with our next batch of peaches.

Peach Muffins

Reviewed: Jul. 5, 2012
I halved the recipe and got 12 perfect muffins. These are DELISH!! I was going to freeze some to take on a trip next week, but I think I'm going to have to make another batch for that! I followed the recipe exactly except for adding 1/2 cup chopped pecans (remember this was for half the recipe -- I would use 1 cup if making the whole recipe).

Sugar and Spice Muffins

Reviewed: Jun. 26, 2012
These have a great flavor, but mine were very dense. I didn't over-stir -- I'm always careful about that with muffins. I'll try them again since the flavor was good to see if I can get them to be a little lighter. They are sweet and I like sweeter muffins.

Donut Muffins

Reviewed: Nov. 9, 2011
GREAT recipe! First time, I followed the recipe exactly even though I don't care for nutmeg. Another reviewer didn't either, but loved the muffins. Nope, I still don't like nutmeg, so the next batch got a little cinnamon, allspice, and ginger. Perfect! Also, we wanted to eat them as warm as possible, so I brushed the tops with the butter while still in the pans and then generously sprinkled the tops with the sugar-cinnamon mixture. That worked great and was much less messy than the rolling approach. My mini muffin pan makes 24 muffins and the batter filled them all with none left over. Baking only took about 12 minutes, but my oven tends to be slightly hot even with a temperature gauge inside. Will definitely be making these again! Thanks for the recipe!!

King Ranch Chicken Casserole I

Reviewed: Sep. 27, 2011
I was short on time so used a rotisserie chicken, but otherwise followed the recipe exactly. It was a huge hit. My son even had "thirds". I'll be making this again soon! Easy and DELISH.
