Mango-Peach Smoothie

I used skim milk & vanilla extract, and had to add some ice. This has a very smooth feel. Set it out on the counter, and it's gone in two minutes!

Chicken Berry Salad

This recipe was fantastic!! I could eat it forever! I'm doing WW, so I'm looking for really good salads. . .I have subbed ham for the chicken before. I also just made the dressing from a low fat version from the Taste of Home site: "Honey Mustard Salad Dressing". Having the berries in there was great way to add flavor and not calories. Thank you!!

Butterscotch Sauce II

This is a delicious sauce, and is so incredibly easy!! I was doubtful that it would work because it was so simple, but it was perfect! I added a pinch of salt, which I though balanced it out nicely, and increased the butter to 4 T. Yumm!

Gobble Up Granola Snacks

I made these almost exactly as is (just added 1/4 t salt and subbed chocolate chips for the raisins), made sure I mixed them a lot, and they turned out perfectly: didn't crumble at all! Thank you for this recipe!!

Asian Chicken Salad

Ooooh, delicious!! If I had ordered it in a restaurant, I would have been delighted! I halved the oil in the dressing, and it still worked great! Fried the noodles, just for fun, but the Chinese noodles from the store would have worked fine, and been a lot less work! Thank you for something we're going to make A LOT!

Creamy Italian Dressing I

Oooh, this is delicious! You MUST make it the day before: it is good the first day, and fantastic the second day! Just threw everything in the blender. It's so easy! I can't believe I was paying for premade dressing when this is so easy and so much yummier! I used light mayo, and it turned out great!

Pork Tenderloin with Creamy Herb Sauce

This was delicious! I cooked a few cloves of garlic in the pan before browning the tenderloins, and skipped the carrots (I put them in the salad!) I also substituted chicken broth and some sugar for the wine. It was so good, and so easy!

Roasted Garlic Mashed Potatoes

This recipe is it!! As per reviews, we roasted the garlic 30 minutes in the oven, and added the oil w/ the garlic. We substituted light sour cream for the milk, and it was perfect!!! Everyone had seconds or thirds at a large family dinner, with lots of other good food they could have had instead! We wondered if we needed to do 2 cloves instead, but this was just right unless you wanted to have garlic with a little potatoes :-) Thank you so much!!

Buttermilk Pancakes II

I am a buttermilk pancake fanatic, and this recipe is **the one**. I did add the 1 T of vanilla, as recommended: yum! Instead of letting the buttermilk and milk come to room temperature for an hour, I just warmed them in the microwave a bit. Don't stir past big lump stage!!! Thank you for this recipe!

Pretty Chicken Marinade

Wow!! My husband is sweet but a pretty tough critic. He rates things out of 10 points, and after 14 years of cooking for him, we've only had one "10". Until this recipe! He interspersed the word 10 between every bite. I didn't change anything, but I made SURE that I used low-sodium soy sauce. This is the recipe!!!!! (I only had time to marinate for 1.5 hours, and used the foreman grill for 6 minutes. Amazing!!)

Honey Wheat Sandwich Rolls

This is the sandwich roll/bun recipe I have been waiting for for years!! I have a whole wheat one that is good, but it doesn't compare to this. All 6 kids plus husband said this was one of the best rolls they have eaten in their lives. **Make sure you let these rise long enough. Mine rose for 1 hour in a warm-ish oven, and they were huge and beautiful. I used the recipe precisely as written, and it was great!

Garlic Chicken

This was just as great as the other reviewers suggested!! It was very easy and fast. I did double the parm cheese & crumb mixture, and sprinkled the leftover crumbs on top of the chicken before baking. I usually use fresh grated parm cheese, but used the stuff in the green can for this recipe, which worked great. Make sure you really warm up the garlic in the oil so the flavor comes through! Thanks for a great dinner!

Grandmother's Buttermilk Cornbread

This is the *perfect* recipe!! I usually alter things in recipes, but this one is perfect as is. I have never made really tasty corn bread before, but this is THE receipe I always needed! I melted the butter in the microwave in a large pyrex measuring cup, and then stired & measured things directly into it, and it was much faster. It always takes my cornbread a full 40 minutes to cook.

Waffles I

These are the BEST waffles any of my crew has ever eaten, and we have tried a LOT of them. I took the advice of other reviewers, and doubled the sugar and vanilla, used buttermilk, and beat the eggwhites separately. These are amazingly delicious, and we just cannot get enough of them. Delicious afterwards heated in the toaster.
