Grandma's Famous Salmon Cakes

I used this recipe as a guideline for my Salmon Cakes, they turned out great. I added some additional seasoning mixing in some Parmesan cheese into the patty, and coating the outside of the patties with Italian breadcrumbs to give it a nice golden, crisp coating on each side. Then I fried them up on a griddle. Thanks for posting this!

Giant Crisp Chocolate Chip Cookies

Loved, Loved, Loved it! I was looking for a real crispy Chocolate Chip Cookie recipe and this was just perfect. Although I did not make them ginormous size, they were so crispy when they cooled, I was in heaven. They were pretty sweet, maybe a little too sweet, I might cut down slightly on the sugar next time, but this recipe is a real gem. Thank you so much!

Quinoa and Black Beans

This was the first time I had worked with Quinoa. One important thing to note, I did not see mentioned in the recipe, make sure you thoroughly wash the quinoa before you cook it to wash off the bitter coating. The only changes I made to this was I shaved the kernels off fresh ears of corn, and I added diced tomatoes. It was quite delicious. As I am discovering quinoa seems to takes on and absorbs the seasoning and flavors of the food it is cooked with very well. I really couldn't discern it's own individual flavor. It looks to be a very promising grain to work with.

Southern-Style Chicken Salad

I do recommend this recipe if you favor the tangy chicken salad. It is deeeee-lish! Just be careful, you might wolf it down all in one sitting.

Fast and Friendly Meatballs

Good foundation recipe for meatballs. The recipe itself is bland, but you can season to your taste. For myself, I used garlic, some finely chopped onion, italian seasoning. Be creative :)

Mock Tuna Salad

Much to my pleasure, this turned out very good. I followed the recipe exactly. And the addition of the sweet pickle relish, really DID give it a tuna salad like taste. Although not exactly, I think it was just as good with a softer consistancy. Great for a pita!

Mexican Bean Burgers

Wow. I LOVED this recipe! I am not a big fan of bean burgers, but this is fantastic. The only changes I made was to adda can of black beans to the can of kidney beans, and I used bisquick instead of whole wheat flour due to not having any in the house. I also made it with a gooey consistancy, which gave a soft on-the-inside and crisp on the outside burger. It was dreamy!

Chickpea Salad II

I was impressed with this recipe. Bearing in mind, I am not much of a vegitarian eater, but wanting to incorporate more of those kinds of dishes into my diet. For a first time chick pea eater, this was a pleasant surprise. Thank you :)

Chicken and Dumplings III

Fabulous recipe, very easy, the broth is just perfect. One thing I want to add, for people who are new to making dump;ings (most recipes for dumplings aren't newbie-friendly) is make sure your dumpling mixture is a wet-sticky dough. If you make the dough too dry and pliable, your dumplings will come out too chewey, A sticly-wet dough will make a soft, fluffy and delicious dumpling. Unforunately I learned this through experimentation and not the recipe!

Pecan Rice

I loved this recipe, it really was a nice depature from most brown rice recipes. The only changes I made, for what was on hand was I used butter instead of margerine, and inste4ad of pecans I used finely chopped unsalted cashews. Wow, was THIS good! I will experiment with more nuts, maybe walnuts next time or even both. Try this!

Hershey's ® Cocoa Cream Pie

Easy and delicious pie. I used spelnda instead of sugar at a 50% ratio. I'll make this again for sure. For the person who said it came out watery 4 times, you need to let it boil a little bit (1-2 minutes) after it reaches a boil. til its somewhat of a pudding consistancy. Not boiling it enough, Iis why yours came out watery, I am sure.

Penne with Spicy Vodka Tomato Cream Sauce

Delicious Grilled Hamburgers

Great recipe for hamburgers. I grilled these on an indoor grill. It gave it a very smoky/bbq-ish flavor. Nice juicy burger. I will make these again next burger night.

Mississippi Egg Custard Pie

Giving this 3 stars, there is some difficulty setting the 9" pie pan in another baking dish with water. I did not have one that was wider than 9" so there were some issues in technicality with this recipe for me. Some water did seep into the pie pan trying to balance it in. And the lowest layer came out harder than the rest. However the top layer did taste fairly good. I would definitely have to go buy a new baking dish for the water bath to even begin to think about trying this again.

Tangy Garlic Steak

Tasty recipe. I used a London Broil, marinated for 24+ hours, and tossed it on an indoor grill. It was very tender and had a nice, twangy taste to it.

Chicken Garlic Pizza

Fabulous alternative for a healthy pizza. I used a Boboli pizza crust from the store, and instead of dabbing ricotta cheese on the top, I made a layer of ricotta cheese on top of herb-butter spread. Then put the chicken down and a thin layer of ricotta on that, and then put the tomatoes, cilantrao and parmesan on top. Very tasty.

Salsa II

Alternative Baked Salmon

I found this to be a mediocre recipe, so I gave it a 3. It had an okay-taste, but I didn't find it particularly complimentary to salmon. There are many other salmon recipes here I would make before considering this one again.
