I love to experiment in the kitchen. I am a wannabe vegetarian, in other words, still a carnivore. I find myself always struggling to find good vegetarian recipes I can really sink my teeth into.

Quinoa and Black Beans
This was the first time I had worked with Quinoa. One important thing to note, I did not see mentioned in the recipe, make sure you thoroughly wash the quinoa before you cook it to wash off the bitter coating. The only changes I made to this was I shaved the kernels off fresh ears of corn, and I added diced tomatoes. It was quite delicious. As I am discovering quinoa seems to takes on and absorbs the seasoning and flavors of the food it is cooked with very well. I really couldn't discern it's own individual flavor. It looks to be a very promising grain to work with.

Southern-Style Chicken Salad
I do recommend this recipe if you favor the tangy chicken salad. It is deeeee-lish! Just be careful, you might wolf it down all in one sitting.

Fast and Friendly Meatballs
Good foundation recipe for meatballs. The recipe itself is bland, but you can season to your taste. For myself, I used garlic, some finely chopped onion, italian seasoning. Be creative :)
