Asian Beef with Snow Peas

My husband and I love this recipe. I use a dash of ground ginger and substitute water for rice wine (because I don't have it). I half the meat and peas but keep the measurements for the sauce. Perfect amount for 2 served over rice.

Fresh Southern Peach Cobbler

This was the first cobbler I ever tried making. It was easy enough to make (peeling the peaches takes time) and it tastes wonderful! I used fresh peaches from a friend's tree. They were a little smaller so I used more than eight. Otherwise, didn't change a thing in the recipe.

Antipasto Pasta Salad

Loved this recipe! I never made this before, and I don't need to try any other recipe. Only a few modification based on what I had or could get (not because anything needed changed) and everything worked great: used tri-color rotini (made it pretty), used an asiago/Romano/Parmesan cheese blend (because that's what the store had), added the italian dressing packet to the dressing to soften it up, used less olives (because I only had a few) and added green onion (because I had it in the garden). I bought two thick slices each of the cheese, genoa and pepperoni from the deli and cubed them so things mixed nicely. It does make a lot! We had it as a main entree for dinner, and we'll be eating it as a side for the rest of the week. Easy enough to half if you want. Thanks for sharing this recipe!

Old Settlers' Baked Beans

I love this recipe and have made it several times. I follow the recipe pretty closely except I cut back on the bacon a little and skip the white sugar. I throw everything in the crockpot in the morning on low and it's ready at the end of the day. Great in the summer with burgers, hot dogs, etc.

Sweet Onion Pie

My husband and I liked this for an occasional side dish. Just got shriners onions and needed to cook some up. Halved the recipe and used a small pie pan. Used Ritz crackers for the crust and half & half instead of milk (because that's what I had) and followed the recipe the rest of the way. Sweet and tasty.

Slow Cooker Scalloped Potatoes with Ham

I made this in two 8" pans (cooked one, frozen one - cooking for only 2 people). Substituted milk for water and used 1 clove of garlic instead of powder. Left eveything else the same. Layered potatoes, ham, onion, cheese twice and poured soup mix over the top. Baked covered 325 degrees for 1-1/2 hours. Really good flavor. Will add more ham next time. Definitely a keeper recipe!

Cake Mix Cookies VIII

I really liked these! My first attempt was using chocolate cake mix using 1/2 cup craisins and some chopped pecans. They turned out great! I can't wait to stock up on cake mixes when they go on sale!

French Onion Soup Gratinee

My husband and I LOVE this soup! I skip the bread and just use croutons in the soup, cover with 2 slices of swiss and broil for a couple minutes. Serve after a nice salad and you have a great meal!

Key Lime Pie VII

Super easy to make, for key lime pie! I always try to make individual servings of desserts when I bring them to parties and get-togethers. People are more likely to eat them. So of course, I made these in muffin tins using paper cups to hold everything together until set. Once set, remove the paper cups and set on a pretty plate and serve. Bring a container of whipped topping, and they'll disappear quickly!

Reuben Casserole

My husband loves this recipe, thinks it ties for one of his all time favorites. I made it with the bread on the bottom one time, and I thought it tasted better. My husband preferred it without the bread on the bottom. So now we make a split plan to satisfy both of us.

Fresh Strawberry Upside Down Cake

I really liked this cake because it was so easy to make with really nice results. My husband and I don't eat cake often, so I made two smaller cakes using 8" round cake pans. They only had to cook for about 35 minutes. I was able to share them with my neighbors at a weekend gathering and with my co-workers on Monday morning! I might try to make individual cakes using my muffin tins next time.

Mom's Macaroni and Cheese

I love this recipe! My only change was to half the salt and skip the topping, otherwise I left everything else the same. I only need to bake it for 20 minutes though. For me 30 minutes dries it out. Several people suggest adding more cooked elbow noodles, so I tried it once, and the mac and cheese ended up too dry. I would leave it like it says!

Crushed Pineapple Sour Cream Pie

I made individual "pies" using my mini muffin pan and mini cupcake papers. I used the graham cracker crust from this site for the base, baked for 7 minutes and removed from the pan to cool. Then I piped the filling into the cups. I also mixed everything by hand and had no problems with runniness. Great recipe!

Taco Pizza

I finally found a taco pizza recipe that's a keeper! I halved the recipe and only made one pizza. I cooked the meat and onion together and skipped the extra taco seasoning with the meat. My only real suggestion is to bake the pizza crust a few minutes before adding the toppings, so the crust doesn't get soggy. I set out tomotoes, shredded lettuce, sour cream and crushed doritos (taco flavored) so we could each choose what to add on top.

Cucumber Soup I

This is a great recipe for all those garden cucumbers you can never seem to keep up with. I made a big batch (minus the sour cream) and put in freezer containers (adding sour cream later). We ate soup throughout the winter! Great in bread bowls, with a large salad, or simple chicken or ham dinners. My husband loves this recipe! I will try it with dill this year.
