Whole Grain Waffles

I was out of waffle mix so was thankful that I found this recipe! Had to sub almond milk for skim milk, olive oil for canola oil and I had no applesauce on hand so added 2 tbs of melted butter. Honestly...pretty dry. My son wouldn't eat them. I did but used a lot of syrup. I think the applesauce (or mashed pears like someone else did) would make a big difference. Still rated it high because I am sure it was my substitutions that wrecked it! Just figured I'd write the review in case you were considering similar changes, particularly omitting the apple sauce. Don't do it. :)

Baked Grains Pilaf

I only gave it three stars because the cooking directions are so off, but when I managed to fix the issue it tasted wonderful! I used the same ingredients/portions...with the exception of adding one small chopped zucchini and only used 2/3 of a large onion. I used vegetable broth (not chicken). I cooked as directed - sauteeing the veggies for about 10 minutes then putting all ingredients in a casserole dish, covered it with foil, cooked at 350 for 30 minutes. When I checked it the grains after 30 minutes they had not even cooked yet - it looked like soup! So I upped the temp to 400 degrees (and also cooked a piece of salmon separately to make a full meal) and left in the oven 20 more minutes. I also put the casserole lid on top of the foil to seal it better. After the 20 minutes it was done and delicious! I thought it may need more spices but it tasted very flavorful (the veggie broth added a nice flavor). I think the veggies may have come out a bit over cooked after cooking for almost in an hour in the oven...it may not be a bad idea to simply sautee the veggies and cook the millet/quinoa on the stove...then simply stir together everything - rather than using the oven at all.

Cheddar-Bacon Mac and Cheese

This was a HUGE hit at a party! I wanted to make something kid friendly,and this was perfect (the adults loved it too...they wound up using it as a chili topper). I had to adjust according to what I had on hand and the amount needed. Here's my alterations: used an entire box (probably about 2.5 or 3 cups) of Vegetable Elbo Macaroni...2 cups of flax milk and about a cup of cream (stirred in the flax milk first)...a litte over 2 bags (so over 4 cups) of shredded cheese (one cheddar, the other a mexican mix)...and about 8 pieces of thick bacon. I also had great wisconsin cheddar so I shredded that on top before popping in the oven. I'll definitely be making this again! Oh, whatever you do, do not skip the bacon. It's the key ingredient. If you do then add seasonings, especially salt.

Chef John's Turkey Noodle Casserole

This is super easy to make and super easy to customize. I was trying to finish off leftover turkey so I used whatever ingredients on hand. The only spices I used were salt, pepper and curry powder (next time I'm adding more curry poweder!). I had shredded colbie jack cheese, so that's what I used. And NO veggies (though this recipe could accomidate any number of veggies). Came out very tasty! My daughter loved it, I thought it needed a bit of spice...so added Chili Pepper Sauce (trader joes) to my serving and it was wonderful! I would even add the chili sauce to the recipe next time so it cooked in...even jalepenos would be good! Oh, and the best alteration I did...was use crushed Cheeze-Its (mixed with some bread crumbs) on top instead of the potato chips. Fantastic!
