Crustless Spinach Quiche

In 1 word...awesome. Light, fluffy...perfectly low carb. Since my dish was a bit bigger, I used 7 eggs. I left everything else the same. You don't even miss the crust in this dish! As far as the cheese, I used what I had on hand which was a mix of Fontina, Asiago and Parmesan. Thank you so much for sharing....this will be a staple in my home!

Creamy Dill Dipping Sauce

Wonderful! Try this easy recipe--it's delicious and a snap to make. I doubled it and added extra dill. Perfect as the dip in my veggie tray. Low carb, fresh and sooo good. Thank you for sharing!

Roasted Portobello Mushrooms with Blue Cheese

Excellent recipe. Easy and delicious. I added some olive oil because I put them on the grill instead of the oven and they came out perfect--the portobello's were tender, meaty and cheesy. yum!

Caesar Salad Supreme

Absolutely delicious dressing. I omitted making the croutons, to make this low carb. Everyone loved it and compared it to Caesar salads we've had at restaurants. The anchovies make this dressing...thank you so much for sharing!

Pineapple Upside-Down Cake VII

Made this in a 9x13 pan and it came out looking so impressive! My family said it not only looked better than the ones in the bakery...it tasted a million times better! I used a yellow cake mix since that's what I had on hand and it was awesome.

Potato Croquettes

So glad I found a way to use leftover mashed potatoes. I had no romano or bacon bits, so I added shredded mexican blend cheese and parsley. I used a lot less oil than the recipe calls for (personal preference) and the croquettes still came out delicious. Thanks for a great recipe that's also very versitile to ingredient changes.

BBQ Chicken Pizza II

Simply delicious. Used KC Masterpiece BBQ sauce and pizza dough from Trader Joes. I had no onions/peppers on hand, but I did have fresh portobello mushrooms and added those. This is such a great recipe to try different combinations with. Give it a try--you won't be disappointed!

Golden Rum Cake

Tasty, moist and sweet. Doubled the rum in the glaze. As one reviewer suggested, I poked holes all over cake before I took it out of it's pan and poured all of glaze on it. Let it cool and whenI flipped it out it came out perfect! Thanks for sharing such an easy recipe...!

Pretzel Salad

So delicious and easy. If you let each layer cool and sit completely (the crust, cream cheese and fruit jello top), it all stays intact with no soggy crust. Perfect recipe for the Holiday BBQ. Thanks for sharing!
