Mexican Bean Salad

Reviewed: Jul. 24, 2014
Wonderful salad. Just wonderful. Very tasty although I did cut back on the sugar/Splenda. The first time I made it I used the hot pepper sauce (Sriracha). I skipped it the second time and could not really tell a difference.

Farmer's Casserole with Zing

Reviewed: Jul. 24, 2014
Really good, simple recipe that went over well on a "Breakfast For Dinner" night. Thank you for a such a tasty recipe. Too much salt for my liking so I will cut back on that next time. (Making it again this week.)This time I going to use breakfast chicken sausage instead of ham. Changes: Added jalapeno pepper flakes because we like zing. Shredded my own potatoes for hash browns because that helped cut the cost of the recipe.

Squash and Zucchini Burritos

Reviewed: Apr. 27, 2014
Really great taste, simple to make, and my family of carnivores were okay with no meat. I really, really loved this. Just delicious! Will make this again and share the recipe. Changes: Substituted cooked dried black beans instead of canned. As we live in an area with a lot of Mexican groceries, I picked up homemade salsa verde at the store. The salsa verde I used kicked up the fire level. Excellent.

Broccoli Soup

Reviewed: Apr. 27, 2014
Changed frozen broccoli to fresh and kept all other ingredients as is including the nutmeg. End result is a very thin soup that tastes like broccoli and chicken broth. Not very appealing. Cannot taste the nutmeg at all. Great if you are the kind of person that eats just because your body needs food and doesn't care about taste. One doesn't need a soup overloaded with creams and cheese, but this is like putting a bunch of grass in the blender. I'll freeze what I have until I figure out what to do with it. Not a repeat recipe. Healthy does not have to mean BLAND!

World's Best Lasagna

Reviewed: Jan. 25, 2014
It was a little bland. Tasted like a frozen lasagna. I added a lot more seasoning. Also followed the advice in the allrecipes magazine about adding more ricotta. Overall this recipe was fine. Not a fan of all the added salt. I left that out. Not the best lasagna for me. I will continue with my usual recipe.

Slow-Cooker Fish Chowder

Reviewed: Jan. 25, 2014
Pros: easy to make; makes enough for a small army Cons: expensive ingredients; very overpowering taste of seafood; thin broth; bland seasoning I made the recipe as written. The taste of the chowder doesn't justify the expense of the ingredients. Even with seasoning, all my family could taste was the overwhelming pungency of fish. The excessive amount of stock called for makes this a thin soup. I like my chowders thick. This wasn't worth it.
