Chocolate Chip Banana Muffins

Used butter and one 5.3 oz. container of Fage greek yogurt (along with the honey - just happened to have that in the fridge) and they came out perfect. I used 3 large bananas. Very moist. My kids loved them! Thanks for the great recipe!

Basic Bechamel Sauce

This was a cinch to make. I stirred in fresh basil and grated parmesan to the sauce after cooking (did not add salt due to the parmesan and omitted the nutmeg). Tossed it with gnocci pasta, chopped ham and peas. My family loved it. Thanks!!

Best Chocolate Chip Cookies

I made this recipe substituting 1 tsp. of the vanilla with 1 tsp. pure almond extract and 1 cup of the flour with 1 cup of almond meal (which I found at Trader Joe's). The cookies spread out thin but were crispy on the outside and very chewy. I baked for 15 minutes. My husband and kids loved them. Delicious with a hint of almond flavor. Yielded 3 dozen large cookies.

Pumpkin Pancakes

We made these as a cooking project in my son's pre-K class. There is plenty of measuring & mixing to keep the kids busy. We used pumpkin pie spice instead of the separate spices (2 tsp total). We also shook heavy cream to make homemade butter to go on top. With maple syrup and whipped cream happy faces, the kids LOVED them. Several kids had seconds.

Lemon Square Bars

We made a batch of triple chocolate chunk brownies and these lemons bars... My 2 children (ages 4 & 6) prefered the lemon bars over the brownies. Now tells you something! It is a great cooking project for kids. They can squeeze the lemons, do all of the mixing and press the crust into the baking dish. Great recipe, thanks!
