Apple Bran Muffins

This comment is for PAM62; of course this recipe does not have eggs in it, it is a VEGAN recipe. That means the strictes type of vegetarians that do not eat: meat, eggs or dairy.

Coconut Ambrosia Salad

This recipe turned out to be delicious, especially the day after. I used light wipped cream and only used a few maraschino cherries as they are very flavourful. I thought the dry coconut I added stood out a bit especially the first day I made it because it's texture is different from anything else in the salad, so fresh coconut might be a better choice. Anyways, I loved the flavour the coconut gave it, it was delicious. Even my boyfriend liked it, he had 3 servings and he is a VERY picky eater! Thank you!

Apple Scones

I just finished eating two of these scones and they are just...DIVINE! They are delicious and very good with some butter and jam. The only change to this recipe was that I added 1 egg because I thought it was too dry before and wouldn't stick together, 1 egg was perfect. I definately will continue to make these all the time, as they're great with tea!

Oven Pancakes

I'm sorry to say but this recipe ended up being a complete disaster for me. My boyfriend doubled the ingredients because he figured this would only be big enough for one person. 4 eggs for one person, or 8 eggs for too people is a lot and not good for you. It also had way too much butter and the entire pancake was floating in liquidy butter which made it crispy on top but mushy on the inside. I am also very sorry to say that we could not eat it. It tasted nothing like a pancake but more like a very thick omelette and very buttery.
