Mini Pineapple Upside-Down Cakes

I had to make this recipe several times before I got it just right. Here is what I did and I recommend these changes highly! Use Duncan Heinz Pineapple Supreme cake mix with water instead of the yellow cake mix with pineapple juice. It is so much better. Use Texas Muffin pans sprayed liberally with cooking spray. Double the topping recipe of brown sugar and butter. Use whole pineapple rings and press them down into the muffin cups but make sure they are level so they don't make your cakes look lopsided. Put the cherries in before cooking. Just press them down into the middle of the pineapple ring. Bake as directed. Take them out of the oven and let them sit for exactly 5 minutes so the topping can cool a bit, otherwise it will all run off. No more than 5 minutes or they will stick. Run a knife around the edge of the cakes and invert. Make sure you put foil under the cooling rack as this is really messy when the butter/brown sugar topping starts to run. By allowing them to cool for 5 minutes, most of the topping will stay on. These are wonderful and so cute! I served them at a Bunko party and they were a big hit!

Chicken Tetrazzini for a Crowd

My family and I loved this! I scaled it down to serve 4 - 6 people and made a couple of minor changes. Here goes...1/2 pound of spaghetti; 1 can soup; 2 Cups cheese; 2 Cups chicken breast; 1 Cup Broth; 8 oz of sliced mushrooms and 1/4 chopped onion and a pinch of crushed garlic that I sauted in a bit of the broth before adding to the mix. I put 1/2 cup of the cheese on top before baking for 22 minutes. Came out perfect! Thanks so much for this recipe!

World's Best Lasagna

Based on the reviews, I thought this recipe was going to be fantastic. I made it exactly as written and neither my husband nor myself liked it. The salt completely overwhelmes the other flavors. One day I may try it again, but if I did I would omit the salt entirely. It was not a good lasagna.

Broccoli Cheese Soup

I made several changes to this recipe based on the reviews I read by others. Here is my list...2 packages of broccoli instead of 1. 3 cans of broth instead of 4. I used heavy cream in place of milk. Added 1/2 pound of sharp cheddar cheese to the pound of velveeta. Also a teaspoon of pepper. I made it for a party and everyone loved it. Flavorful and creamy. I'm thinking next time I will add another package of broccoli. This is a great recipe. I will definitely make it again.

Oyster and Cornbread Dressing

I made this for Thanksgiving. At first I was apprehensive about putting this on the menu. I'm so glad I did! It was a huge hit with my guests...many of whom had never even heard of it. I used a 10 oz jar of oysters and it was wonderful. Thanks for a great addition to my holiday feast!

Cheesy Ham and Hash Brown Casserole

Stuffed Green Peppers I

My husband and I loved these! Followed the recipe exactly as written as I always do the first time. The only change I'll make next time is to reduce the tomato soup by 1 can, and I'll add a bit of extra cheese to the tops of the peppers just for presentation. These are really great! Pork Chops in Beer

This is delicious!! The only changes I made was to add salt, pepper and garlic powder directly to the pork chops before baking. I submerged the chops in the sauce and covered in foil for the entire cooking time. So simple to make and so good!!

This is a fabulous recipe! So easy to make and yes, it does have the flavor of lobster! Wow! Everyone loved it! I will be making this often! As a side note, I didn't use nearly as much butter as was called for and it was still wonderful!

Fluffy French Toast

Both my son and my husband said this is the best french toast they've ever eaten. My only recommendation is not to soak the bread too long or it will be soggy. I even covered the pan and it still didn't cook through. But when just soaked for a few seconds it turned out great!

Aunt Teen's Creamy Chocolate Fudge
