Ham and Asparagus Fettuccine

Wow! Definitely not the healthiest meal I've ever prepared but DELICIOUS! Also one of the easiest things I've ever made. From the first bite, my son was asking when I would make it again. I made just as instructed but used 1/2 cream and 1/2 regular milk.

Orange-Chile Tilapia

This was just not good. The chili and cayenne were totally overwhelming, and there was definitely something missing. Squeezing orange juice over the cooked fish made it edible, but far, far, far from good. Don't make this.

Hearty Hamburger Soup

A good base for making a great soup. I doubled the barley as I like it and wanted a bit thicker 'stew'. This could be modified in so many ways and still taste delicious!

Good but not 'WOW' good in my opinion. I would definitely make again because of the ease and relatively inexpensive ingredients. Added 1/2 tsp. Italian seasoning and 50% more tomato sauce.

Butterscotch Gingerbread Cookies

I DO NOT bake, but I decided to make these cookies for a (mandatory) work cookie exchange. They were so easy, and SO delicious! My husband and I could not believe they came out of MY kitchen! I followed suggestions and baked them at 330 for 10 minutes. The first batch was a little TOO chewy for my taste, so I baked the rest for 11-12 minutes at 330 with perfect results. The butterscotch is such a great blend with the gingerbread flavor. Make these, they are my new holiday tradition!

Stuffed Peppers with Turkey and Vegetables

Yummy! My husband said these are the first stuffed peppers he's ever eaten that tasted as good as they smell! I did make a few small changes - I subbed canned corn for zucchini, I used Rotel instead of diced tomatoes, I added a sprinkle of red pepper flakes, and I added about 3/4 cup of prepared spaghetti sauce. We loved these and will be making them often!

Asian Beef with Snow Peas

This was SOOOO good! I added veggies (red bell pepper and sliced water chestnuts) but kept everything else the same. My husband thought it was one of the best dishes I've ever made. Cooking this will make you wonder why you ever go out for Chinese!
