Vegan Cupcakes

My 11-year old son and I made these and we added two teaspoons of cocoa powder and some carob chips to make chocolate, chocolate chip cupcakes. They were moist and delicious. Though, they did take a few more minutes to bake than the recipe called for.

Marrakesh Vegetable Curry

It was very good. I added a jalepeno to give it a kick and I used Hungarian paprika for more heat. I'm not a big fan of sweet dishes, this seemed a bit sweet to me but was still good. I served it on a bed of couscous.

Slow Cooker Buffalo Chicken Sandwiches

This is a pretty good recipe. My sons love it. However, I wish you could somehow make a lower sodium version. That's the only drawback on this for me. I like to put this mix in a lettuce wrap for a lower carb version.

Ghirardelli® Ultimate Chocolate Fondue

This is a great recipe. I eyeballed the heavy cream instead of what the recipe called for. To heat up the leftovers, I just added more heavy cream until it had the consistency I was looking for. We served it with marshmellows, Oreao cookies, bananas, strawberries, and granny smith apples.

Cheese Fondue

This is a great fondue recipe. We use it every New Years' Eve. I shred the cheese in my Cuisinart food processor and toss with flour. I use Sauvignon Blanc, which is a nice dry wine that's relatively inexpensive. Served it with sweet pea pods, grape tomatoes, french bread, baby carrots, broccoli, and cauliflower.

Thai Green Curry Chicken

Fantastic recipe! I added double the Mae Ploy green curry paste, fried the 1-inch pieces of chicken breast in 2 Tbs peanut oil then added a chopped zuchini, matchstick carrots, a sliced white onion, and a chopped red pepper. I added a tsp of sugar instead of what the recipe called for and used Braggs' liquid aminos in place of soy sauce for a lower sodium meal. I simmered it 10 minutes, removed it from heat and I added grape tomatoes and three diced birds eye chilis I had soaked in boiling water for ten minutes. Then I let it all sit for about 10 minutes while the jasmine rice finished cooking. I served it over jasmine rice and added chopped green onions, torn basil leaves and cilantro as garnish. My picky son loved it and my husband raved that it was restaurant quality green curry. We will definitely make again. Thanks Laus for posting!

Yummy Sweet Potato Casserole

I roast the potatoes in the oven on 350 for an hour. Be sure to poke a few holes in the potatoes prior to baking. Once cooled, I sliced them up. I don't like it creamy. I also aded a shot of brandy to the mixture. I fry about 4 strips of bacon and crumble that up and add to the topping. About 1/2 cup mini marshmellows top the dish. I baked it until the marshmellows were browned.

Brown Sugar Meatloaf

This was fantastic. I made it with ground venison. I marinated the venison in milk overnight to remove the game taste. I agree with other reviews that the ketchup and brown sugar should go on top of the loaf instead of in the bottom of the pan. I used my food processor to make the onions finely chopped. I added 4 minced garlic cloves.This turned out fantastically well. I would add a bit of Worcestershire sauce too.

Scalloped Potatoes and Onions

I used my food processor to slice the potatoes evenly thin. I used dried mince garlic to save time of crushing fresh garlic. I also added capers. It was delicious even for my pickiest eater.

Slow Cooker Chicken and Dumplings

I used 1 can cream of chicken with mushroom soup and 1 can cream of celery soup. I also added poultry seasoning, sage, and marjoram. I took the other reviewers' advice and put salt, pepper and garlic powder on both sides of the biscuits.

Stuffed Green Peppers I

i am extremely disappointed that the rice never fully cooked even after cooking the peppers in the oven for 45 minutes! What a waste! I vegetarianized the recipe. I used soy crumbles instead of ground meat. I also used lots of garlic, basil and oregano. I also boiled the peppers for 5 minutes prior to stuffing. I punctured holes in the bottoms of the peppers so it wasn't too soupy like a previous review said. i also added soy cheese instead of regular cheese. I added 1/4 cup of red wine to the "meat" and onions while they cooked. i think if i had used frozen precooked rice, this recipe would have been fantastic.

Vegan Mac and No Cheese

I doubled the nutritional yeast, added paprika and sundried tomatoes. I used Rice milk in place of water and mixed in a little at a time to not make it as runny. I also added some dry, ground mustard and cayenne pepper. My sons LOVED it and would like to have it again!

Pork and Sea Shells with Summer Vegetables

Since the sauce takes 35 minutes to simmer, do not boil your noodles until the last 15 minutes of the sauce simmer. I added capers and used fire roasted diced tomatoes. This sauce has a full-bodied flavor and is very good.
