Pizza Pasta

Reviewed: Sep. 22, 2010
The reason I gave it 3 stars is because it tasted nothing like pizza... all we tasted was spaghetti. The beef overpowered the pepperoni & you only knew you were eating a piece of pepperoni if you saw it on your fork before putting it in your mouth. I think I will attempt this dish again, I will only use 1/2 pound of ground beef & double the pepperoni to 8oz & see if it makes it more like I would expect a 'pizza pasta' to taste.

Tater Tot Taco Salad

Reviewed: Aug. 7, 2010
For what it was, this was pretty good. It was simple to make - great for a night where you gotta get dinner on the table, but don't have much time (or energy). I did add onions in with the beef when it was cooking, and did not add the olives to the top. I, instead, used diced green onions.

These were awesome! I made some white gravy from the oil it fried in, and it just made the meal.

Chicken and Spinach Alfredo Lasagna

Reviewed: Jun. 11, 2010
I had heavy cream, ricotta cheese, & baby spinach that all needed to be used...so I did an ingredient search & came across this recipe. It was SO good, & I will be making it again. Such a nice change from normal lasagna! I did make a change or 2 though from reading other reviews. I used 1 can cream of mushroom & 1 can cream of chicken. I also omitted the mushrooms in the dish, but served it alongside 'Mouth Watering Stuffed Mushrooms' from this site. It was quite a delectable meal, & my whole family enjoyed it...kids & adults alike!

Chipotle Mayo

Reviewed: Jun. 8, 2010
I love this recipe as is & I also love to make more of a sauce using this recipe as a base. I serve the original recipe on sandwiches, but I do usually add fresh garlic to it. When I turn this recipe into a dipping sauce, I add ranch dressing, double the chilies, & add lots of fresh garlic. Its just heavenly when paired with Connie's Zucchini 'Crab' Cakes from this site!

Rempel Family Meatloaf

Reviewed: May 26, 2010
My daughters & I really enjoyed this meatloaf, and found it to be one of the best recipes we have ever made. However, my husband did not care for it much...but he's not really a meatloaf man either.

Southern-Style Buttermilk Fried Chicken

Reviewed: May 21, 2010
This was just fantastic.....droolworthy!! I added a few good splashes of hot sauce in the buttermilk marinade mixture, & some paprika in the flour mixture - but no other changes than that. Used the drippings to whip up some chicken cream gravy. Yummy!!!

Green Chili Stew

Reviewed: Apr. 29, 2010
Very good! I like to use 7oz of green chiles just because I like it really spicy. Sometimes, I'll add corn to it too..but it's good with or without it.

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

Reviewed: Mar. 10, 2010
Very good, but you really must increase the wing sauce! I tripled the sauce when I made it. I also sauteed some onion slices in the bacon grease & added that to the sandwich, & hoagie rolls. I used leftover diced chicken breast, and I think this will be a new standby for us in using up our leftovers!!

Firecracker Fried Chicken Drumsticks

Reviewed: Jan. 21, 2010
This was good - but I could not taste the spice whatsoever in it after letting the chicken marinate in hot sauce for 4 hours. I will make it again and let the chicken soak in the hot sauce for a full 24 hours to see if that brings in the spice. The outside was perfectly crisp though, and I had no problem with the breading falling off during frying. I dumped the chicken in a colander prior to putting it in the breading to drain any excess liquid, and I made sure my oil was plenty hot before adding it in.

Cowboy Caviar

Reviewed: Jan. 21, 2010
Excellent! My children, myself, and my husband all loved this dish. I used about half of the italian dressing called for (that was plenty) and squeezed in the juice of one lime. I also used fresh jalapeno instead of pickled. I absolutely will be making this one again!

Hobo Dinner

Reviewed: Jan. 19, 2010
My mom made this for me growing up & she got the recipe from her mom. Sometimes I add a package of onion soup mix, and sometimes I just add a good bit of worcestershire sauce both to the meat, and then more on top of the patty/veggies. Also, I make individual foil packets instead of one big one.

Tater Tot Casserole

Reviewed: Jan. 18, 2010
This was pretty good. Nothing sensational, but its a tater tot casserole, so you can't expect that anyway! Its very easy to make - perfect for busy nights & easily a kid favorite. I precooked the tater tots to avoid them turning out mushy, added minced garlic & extra worcestershire sauce to the meat mixture, & sprinkled shredded pepperjack cheese on top.

French Baguettes

Reviewed: Jan. 10, 2010
Very yummy! I followed the recipe exactly, except I did not roll the dough out. Instead, I just divided it into 2 equal portions and shaped into baguettes. Any leftovers are great to make some garlic bread out of the next day. I will make this again.

Dad's Pan-Fried Green Beans

Reviewed: Dec. 15, 2009
Very good! Hubby doesn't like green beans, but he really enjoyed these! I used olive oil instead of sesame oil & omitted the balsamic vinegar (didn't have either) and it was great. Thanks for the great recipe!

Original Homemade Italian Beef

Reviewed: Dec. 11, 2009
This has been in my recipe box for some time, and I finally decided to give a try - I am so glad that I did. It is wonderful! I used the Italian Salad Dressing mix recipe that is on this site, and a little zesty italian dressing - mixed in half of the pepperoncini & juices halfway into cooking, and then the rest right after shredding, then let it cook about 30 more minutes. I served it on the Soft Onion Sandwich Rolls from this site & some melted provolone, and it was sensational. I do not think that standard hamburger rolls would do this recipe justice. I strained the meat from the juice, and served the juice alongside as an au jus, and it made it even better. I will definatly be making this one again and again!
